Abstract

本発明の課題は、油脂に対して、簡便に固化を促進できる方法を提供すること、及び固化促進方法に用いる固化促進剤を提供することである。 脂肪酸吸着能を有するケイ酸塩と遊離脂肪酸を固化促進対象の油脂へ添加するだけで、対象の油脂の固化が促進されることを見出し、本発明を完成させた。

Description

油脂の固化促進方法
 本発明は、油脂の固化促進方法、及び該方法に使用する固化促進剤に関するものである。
 油脂を含む食品において、油脂の固化挙動はその食品の製品設計や製造、保存などに大きく影響を及ぼす場合がある。特に、製菓や製パンに用いられるマーガリンやショートニング、チョコレート類、ハードバター製品などの油脂組成物は、その組成に占める油脂の割合が高く、使用する油脂の固化挙動に左右される場合がある。
 特許文献1では、油脂の固化を促進させる手段として、ワックス類の使用が提案されている。また、特許文献2ではタルクを主成分とする固化促進剤、特許文献3ではパーム果実由来の固化促進剤を利用した固化促進の技術が開示されている。油脂の固化促進法として、特許文献4ではグラファイトシートを利用した晶析方法が開示されている。

 本発明の目的は、油脂に対して、簡便に固化を促進できる方法を提供すること、及び固化促進方法に用いる固化促進剤を提供することにある。
 本発明者は、上記課題を解決するため鋭意検討を行った。特許文献1はワックス類を添加した時の固体脂含量の変化のみで、明確な固化促進効果があるとは言い切れない。特許文献2では、タルクの種類や形状が固化促進効果に影響を与えることが記載されており、使用に煩雑さがある。特許文献3のパーム果実由来の固化促進剤は製造が煩雑で、製造時の環境負荷も大きい。特許文献4のグラファイトシートを利用した晶析方法では、グラファイトシートを加工した特殊な晶析装置が必要となり、汎用性に欠けるものであり、より強い固化促進効果が得られる技術が求められていた。
 本発明者が更に検討を行ったところ、脂肪酸吸着能を有するケイ酸塩と遊離脂肪酸を固化促進対象の油脂へ添加するだけで、対象の油脂の固化が促進されることを見出し、本発明を完成させた。
 すなわち、本発明は、
(1)下記(A)及び(B)を固化促進対象の油脂に共存させる、油脂の固化促進方法、
(A)使用時の平均粒子径における脂肪酸吸着率が8%以上であるケイ酸塩、
(B)油脂中0.01重量%以上5.0重量%以下である遊離脂肪酸、
(2)該遊離脂肪酸が、炭素数12から24の飽和脂肪酸である、(1)に記載の油脂の固化促進方法、
(3)該遊離脂肪酸が、炭素数12から24の不飽和脂肪酸である、(1)に記載の油脂の固化促進方法、
(4)該遊離脂肪酸が、炭素数12から24の飽和脂肪酸及び炭素数12から24の不飽和脂肪酸の混合物である、(1)に記載の油脂の固化促進方法、
(5)該ケイ酸塩が非晶質シリカである、(1)から(4)のいずれか1項に記載の油脂の固化促進方法、
(6)該遊離脂肪酸と、該ケイ酸塩との共存比(A/B比)が、0.001以上50以下である、(1)から(5)のいずれか1項に記載の油脂の固化促進方法、
但し、Aは該遊離脂肪酸(重量%)、Bは該ケイ酸塩量(重量%)をさす、
(7)該ケイ酸塩が、固化促進対象の油脂に対し、0.05重量%以上5.0重量%以下となるように添加する、(1)から(6)のいずれか1項に記載の油脂の固化促進方法、
(8)(1)から(7)のいずれか1項に記載の油脂の固化促進方法に使用する、該ケイ酸塩を含有する、油脂用固化促進剤、

 また換言すれば、
(11)使用時の平均粒子径で脂肪酸吸着率が8%以上であるケイ酸塩と、遊離脂肪酸を0.01重量%以上5.0重量%以下となるように固化促進対象の油脂に共存させる、油脂の固化促進方法、

 本発明によれば、簡便に油脂の固化促進を行うことができ、また簡便に使用できる油脂用固化促進剤を得ることができる。
 以下、本発明を具体的に説明する。
(ケイ酸塩)
 本発明において、ケイ酸塩とは、ケイ素を含有する物質であり、二酸化ケイ素のような、1個又は数個のケイ素原子を中心に、電気的陰性の配位子がケイ素原子を取り囲んだ構造を持つアニオンを含む化合物の総称である。ケイ酸塩には、一般的に、周期的な規則性の結晶構造を持つ結晶質シリカ、規則性がない非晶質シリカがある。例えば、結晶質シリカにはタルクやカオリン、ゼオライト、クリストバライト、合成石英ガラスなどが、非晶質シリカには珪藻土や二酸化ケイ素、シリカゲル、ケイ酸マグネシウム、ケイ酸カルシウム、白土などが挙げられる。これらのうち、本発明では、ケイ酸塩が非晶質シリカであることが望ましく、より望ましくは二酸化ケイ素、ケイ酸カルシウム、ケイ酸マグネシウム、さらに望ましくはケイ酸カルシウム、ケイ酸マグネシウムである。適当なケイ酸塩を用いることで、好ましい油脂の固化促進効果を得ることができる。また、ここに挙げる物質であれば、由来は天然物あるいは合成物に特に制限されるものではない。また、本発明のケイ酸塩とは食品添加物に限定されるものではない。
(脂肪酸吸着能)
 本発明の油脂の固化促進方法は、脂肪酸吸着能を有するケイ酸塩を使用する必要がある。ここで言う脂肪酸吸着能とは、使用時の平均粒子径におけるケイ酸塩と脂肪酸との結合能力を示す指標で、次のような算出に基づくものである。すなわち、遊離のパルミチン酸を1重量%配合したパーム油を基質とし、ここに吸着剤として使用時の平均粒子径のケイ酸塩1重量%を添加後、60℃環境下で60分間150rpmにて振とうする。振とう後、60℃環境下で濾過し、濾液の酸価を測定する。反応前後の酸価の減少率を吸着剤1gあたりの脂肪酸吸着率として算出する。
 ここで「使用時」とは、本発明における、固化促進方法へ供する時であり、固化促進効果を発揮させる時の意味である。
 本発明での脂肪酸吸着能は、ケイ酸塩の使用時の平均粒子径での脂肪酸吸着率が8%以上である必要があり、より好ましくは9%以上、さらに好ましくは10%以上である。使用時の平均粒子径でのケイ酸塩の脂肪酸吸着率が適当であると、結合したケイ酸塩と脂肪酸が固化対象の油脂内で不溶化し、これが結晶核となって、油脂の固化を好ましく促進することができると考えられる。なお、酸価の測定方法は、日本油化学会制定の「基準油脂分析試験法」に準拠して行う。
 なお、本発明にかかる油脂用固化促進剤においては、上記の「油脂の固化促進方法」に使用可能なケイ酸塩を使用する。
 本発明の該ケイ酸塩は、固化促進対象の油脂に対し、0.05重量%以上5.0重量%以下となるように添加することが好ましい。この量は、より好ましくは、0.1重量%以上4.0重量%以下、さらに好ましくは0.1重量%以上3.0重量%以下である。この添加量が適当であると、目的とする油脂の固化を好ましく促進することができる。
(脂肪酸)
 本発明の油脂の固化促進方法は、脂肪酸を共存させる必要がある。ここで言う脂肪酸とは、グリセリンに結合したものではなく遊離の状態で存在するものである。
 本発明に係る遊離脂肪酸は、固化促進対象の油脂に0.01重量%以上5.0重量%以下とすることが好ましい。この量は、より好ましくは0.01重量%以上4.5重量%以下、さらに好ましくは0.01重量%以上4.2重量%以下である。この脂肪酸量が適量であると、目的とする油脂の固化を好ましく促進することができる。
 該脂肪酸は、固化促進対象の油脂に、所定量すべてを別途添加しても良く、また固化促進対象の油脂に元々含まれる脂肪酸にて適量としても良い。さらには、固化促進対象の油脂に元々含まれる脂肪酸量に応じて、別途添加する脂肪酸量を適宜調整することも可能である。なお、本発明で言う脂肪酸は、日本油化学会制定「基準油脂分析試験法」の「酸価」に記載の遊離脂肪酸の算出式で得られた遊離脂肪酸のことである。すなわち、遊離脂肪酸(重量%)=酸価×fから算出でき、係数fは各油脂の主要構成脂肪酸の係数を用いる。本発明の該脂肪酸の検出限界は0.002重量%である。
 なお、本発明に係る油脂用固化促進剤においては、上記の「油脂の固化促進方法」に使用可能な脂肪酸を使用する。
 本発明に係る遊離脂肪酸は、飽和脂肪酸、不飽和脂肪酸のいずれでも良い。該脂肪酸は、好ましくは炭素数12から24の飽和脂肪酸及び/又は炭素数12から24の不飽和脂肪酸、より好ましくは炭素数12から炭素数24の飽和脂肪酸、さらに好ましくは炭素数16から炭素数24の飽和脂肪酸である。共存する脂肪酸が上記範囲にあると、ケイ酸塩との吸着性が高く、目的とする油脂の固化が著しく促進される傾向にあるため好適である。
(脂肪酸とケイ酸塩の共存比)
 本発明に係る油脂の固化促進方法において、遊離脂肪酸と、脂肪酸吸着能を有するケイ酸塩の共存比(A/B比)とは、遊離脂肪酸量(A(重量%))をケイ酸塩量(B(重量%))で割った値である。該A/B比は、好ましくは0.001以上50以下であり、より好ましくは0.005以上50以下、さらに好ましくは0.01以上48以下、さらにより好ましくは0.01以上45以下、特に好ましくは0.05以上40以下である。A/B比が上記範囲にあると、目的とする油脂の固化をより好ましく促進することができる。なお、ここで言う遊離脂肪酸には、ケイ酸塩に吸着した遊離脂肪酸も含む。
 なお、本発明に係る油脂用固化促進剤においては、上記の「油脂の固化促進方法」に使用可能なA/B比を使用する。
(ケイ酸塩の微細化)
 本発明に係るケイ酸塩の粒子径は、使用する際の平均粒子径における脂肪酸吸着率が8%以上となるような粒子径である必要がある。すなわち、粒子径は、各ケイ酸塩の脂肪酸吸着能により規定される。
 所定の粒子径とするための微細化の方法は、乾式粉砕や湿式粉砕などが例示できる。一般的には、ケイ酸塩の使用時の平均粒子径が、500μm以下が好ましく、より好ましくは300μm以下、さらに好ましくは250μm以下である。なお、該平均粒子径の下限に制限はないが、過剰に微細化する際のエネルギーロスの観点から、0.1μm以上が好適である。使用時の平均粒子径が好ましい値となることで、ケイ酸塩の脂肪酸吸着率も適当な値となり、目的とする油脂の固化を好ましく促進することができる。なお、ここで言う平均粒子径は、SALD2300(SHIMADZU製)を用いて測定して得られたメイジアン径(D50)のことである。
(固化促進できる油脂の種類及び対象)
 本発明の油脂の固化促進方法を適用することができる油脂とは、特に制限はないが、好ましくは10℃以上の融点を持つ油脂である。例えば、パーム油、ヤシ油、パーム核油、牛脂、豚脂、乳脂、サル脂、シア脂、マンゴー脂、コクム脂、イリッペ脂、カカオ脂などの天然固形脂、及びそれらを原料として分別、硬化、エステル交換反応などの加工を施したものが挙げられる。また、硬化油や極度硬化油、エステル交換反応油なども用いることができる。また、大豆油、菜種油、ヒマワリ油、綿実油、米油、米ぬか油、落花生油、コーン油、サフラワー油、オリーブ油、カポック油、ゴマ油、月見草油、魚油、鯨油などの液状油を原料とした硬化油やエステル交換反応油なども用いることができる。また、それぞれ精製する前の油脂も用いることができる。本発明では、これらの油脂を1種又は2種以上用いることができる。なお、本発明で言う融点は、日本油化学会制定「基準油脂分析法(I)」の上昇融点のことである。
(油脂用固化促進剤) 
 本発明において、使用時の平均粒子径での脂肪酸吸着率が8%以上であるケイ酸塩を含有する剤を「油脂用固化促進剤」として使用することもできる。また、固化促進対象の油脂に所定量の脂肪酸が含まれていない場合には、所定量の脂肪酸を含む剤として、使用することもできる。この場合の脂肪酸は、好ましくは1重量%以上99重量%以下が良く、より好ましくは1重量%以上95重量%以下、さらに好ましくは1重量%以上90重量%以下、さらにより好ましくは3重量%以上90重量%以下である。この範囲が適当であると、固化促進対象の油脂に剤を添加した時に、油脂の固化を好ましく促進することができる。
 本発明に係る油脂用固化促進剤が脂肪酸を含む場合のA/B比は、0.001以上15以下が好ましい。この範囲は、より好ましくは0.001以上13以下、さらに好ましくは0.005以上10以下である。この範囲が適当であると、固化促進対象の油脂に該剤を添加した時に、油脂の固化を好ましく促進することができる。なお、本発明に係る油脂用固化促進剤が脂肪酸を含まない場合のA/B比は、言うまでもなく0である。
 また、油脂用固化促進剤に含む該ケイ酸塩は、好ましくは1重量%以上25重量%が良く、より好ましくは5重量%以上20重量%以下、さらに好ましくは8重量%以上20重量%以下である。この範囲が適当であると、剤を固化促進対象の油脂に添加した時に、油脂の固化を好ましく促進することができる。
(利用方法)
 本発明の油脂の固化促進方法について説明する。製造工程に固化工程を有し、固化工程後に分別工程を経る油脂の製造方法において、固化工程時に本発明の固化促進方法を用いることで、固化促進対象の油脂の固化が促進される。このことは、固化工程から分別工程までにかかる製造工程の時間を短縮することができる。具体的には、融解状態にある固化促進対象の油脂に、使用時の平均粒子径における脂肪酸吸着率が8%以上であるケイ酸塩と遊離脂肪酸とを共存させた後、冷却などの一般的な固化条件に付す。その後、固化工程で得られた固体を分別工程で分別して、目的の油脂製品を得る。ここでいう分別工程の方法は特に限定しないが、溶剤分別、溶剤不使用のドライ分別などが挙げられる。
 本発明の油脂の固化促進方法において、固化促進の対象とする油脂に対して、A/B比が0.001以上50以下であることが好ましい。この比の詳細は既に記載した通りである。
 本発明の油脂の固化促進方法において、固化促進の対象とする油脂に対して、使用時の平均粒子径での脂肪酸吸着率が8%以上であるケイ酸塩が0.05重量%以上5.0重量%以下となるように添加することが好ましい。この量の詳細は既に記載した通りである。
 また、本発明の油脂の固化促進方法において、固化促進対象の油脂に遊離脂肪酸を0.01重量%以上5.0重量%とすることが望ましい。この量の詳細は既に記載した通りである。
 なお、固化促進対象の油脂に所定量の遊離脂肪酸が含まれている場合は、その含有量に応じ、別途添加する脂肪酸量を適宜調整することも可能である。
(油脂用固化促進剤の使用)
 また、本発明に係るケイ酸塩を含む剤を調製し、該剤を「油脂用固化促進剤」として使用することも可能である。このような剤の使用様態も、本発明に係る油脂の固化促進方法に準ずるものである。
(固化促進効果の評価)
 本発明による油脂の固化促進効果は、油脂の固化速度とDSC測定の結果に基づいて評価することができる。より望ましくはDSC測定の結果に基づいて評価することができる。
 油脂の固化速度とは、融解した油脂を一定温度条件下で固化させ、その固体脂量をSFCで測定し、その変化量から算出される手法であって、ある時点での固体脂量が多いほど、その油脂の固化が速いことを意味する。本発明での固化速度の評価は、固体脂量が終点の半分となる時間の速さから固化促進効果の有無を判定する。なお、SFCとは、Solid Fat Content(固体脂含量)の略称であり、一定の温度下で油脂中に存在する固体脂の含量を核磁気共鳴(NMR)装置で測定する。
 またDSC測定とは、示差走査熱量測定(Differential Scanning Calorimetry)の略称であり、測定試料と基準物質との間の熱量の差を計測することで、凝固温度や融点、ガラス転移点などを測定する熱分析の手法である。本発明でのDSC測定の評価は、一定速度又は一定温度で試料の冷却を行った際の発熱ピークの立ち上がり温度(凝固開始温度)及び発熱ピークトップ温度から、固化促進効果の有無を判定する。
(実施例)
 以降に本発明をより詳細に説明する。なお、文中「部」及び「%」は特に断りのない限り重量基準を意味する。
<検討1>
(固化方法)
 表1の配合に従って、60℃以上で完全融解した精製パーム油に、パルミチン酸のみ、あるいは各種ケイ酸塩とパルミチン酸、各種ケイ酸塩のみを共存させ、再度60℃以上で油脂を完全融解した上で、凝集物が目視で確認できなくなるまでボルテックスミキサーにより十分に混合した。得られた混合液を直ちに固化速度の測定(SFC)及びDSC測定に供した。
 なお、粉砕したケイ酸塩を用いる場合は、「○ケイ酸塩の湿式粉砕方法」に従い、粉砕したものを使用した。ここでは、粉砕に使用する助剤に、その後の固化テストで使用する油脂(例えば「精製パーム油」)と同じものを使用し、固化促進対象の油脂におけるケイ酸塩の量を調整した。
 なお、精製パーム油中の遊離脂肪酸量は、日本油化学会制定の「基準油脂分析試験法」の「酸価」に記載の方法に準拠し、パルミチン酸として算出した。
○ケイ酸塩の湿式粉砕方法
1.80℃に温調し、完全融解した固化促進対象の油脂に、粉砕対象のケイ酸塩とジルコニアボール(φ3mm)を添加した。
2.三次元ビーズ衝撃式ホモジナイザー(ShakeMaster AUTO(株式会社バイオメディカルサイエンス製))にて、1000rpmで60分間粉砕した。
3.80℃以上で完全融解した状態において、上清をスポイトで分収し、これを試験に供した。なお、ジルコニアボールは粉砕後すぐに沈降し、ピペットの口径よりも粒径が大きいため、除かれることとなった。
(脂肪酸吸着率の算出方法)
 脂肪酸吸着率は次のような方法で実施した。パルミチン酸を1重量%配合した精製パーム油を基質とし、吸着剤として種々のケイ酸塩1重量%をそれぞれ添加した後、60℃で60分間、150rpmにて振とうした。その後、60℃環境下で濾過し、濾液の酸価を測定した。反応前後での酸価の減少量を吸着剤1gあたりの脂肪酸吸着率として算出した。
 なお、「○ケイ酸塩の湿式粉砕方法」で粉砕したケイ酸塩については、粉砕処理時の添加量をもとに、「脂肪酸吸着率の算出方法」で必要な配合比となるように調整したうえで、脂肪酸吸着率を算出した。
(固化速度の測定)
 85℃環境下で15分間混合液を融解後、60℃環境下で30分間静置し(安定化)、25℃定温にて4分毎にSFCをNMR(minispec mq20(ブルカージャパン株式会社製))で測定した。90分から120分におけるSFC変化量が±0.5%未満となるまで測定(最大120分とした)し、4分後ごとのSFCの変化量が0となる地点を終点として、その地点のSFC値を得た。SFC曲線から、SFCが終点の半分となる時間(以下、結晶化ハーフタイムという)T(1/2)minを算出した。そして、結晶化ハーフタイムを基準に固化速度倍率を算出し、固化促進効果を評価した。なお、固化速度倍率(無添加値との相対値)は次式から算出した。

固化速度倍率=Test T(1/2)/無添加Cont T(1/2)
Test T(1/2)は実施例あるいは比較例に記した添加物を配合した混合液の結晶化ハーフタイムとした。
無添加Cont T(1/2)は添加物及び脂肪酸が無配合の油脂の結晶化ハーフタイムとした。
 SFCでの固化促進効果の有無は、固化速度倍率を基に下記に従って評価した。
評価点0点:固化速度倍率が1.5倍未満(固化への影響が少ない)
評価点1点:固化速度倍率が1.5倍以上(固化促進)
評価点2点:固化速度倍率が3倍以上(顕著な固化促進)
評価点3点:固化速度倍率が4倍以上(かなり顕著な固化促進)
評価点4点:固化速度倍率が5倍以上(非常に顕著な固化促進)
(DSCの測定)
 DSC(DSC3+(メトラー・トレド株式会社製))にてサンプル20mgにて、混合液の吸熱反応の変化を窒素雰囲気下で測定し、冷却時のオンセット温度(凝固開始温度)とピークトップ温度(発熱ピークトップ温度)を評価した。測定温度条件は、初期温度85℃(10分間)、冷却速度1℃/分、最低温度0℃(10分間)、加熱速度5℃/分、最終温度85℃、とした。
 DSCでの固化促進効果の有無は、上昇温度を基に下記に従って評価した。
評価点0点:凝固開始温度変化又は高温側発熱ピークトップ温度変化が1℃未満(固化への影響が少ない)
評価点1点:凝固開始温度及び高温側発熱ピークトップ温度が共に1℃以上上昇(固化促進)
評価点2点:凝固開始温度及び高温側発熱ピークトップ温度が共に3℃以上上昇(顕著な固化促進)
評価点3点:凝固開始温度及び高温側発熱ピークトップ温度が共に5℃以上上昇(かなり顕著な固化促進)
評価点4点:凝固開始温度及び高温側発熱ピークトップ温度が共に7℃以上上昇(非常に顕著な固化促進)
(評価方法)
 固化速度倍率あるいはDSCの評価のいずれかに、2点以上の評価がある検討サンプルを、固化促進効果を有するとして合格とした。

ケイ酸塩Aには富士フイルム和光純薬株式会社製「シリカゲル」を湿式粉砕したものを使用した(粉砕後の平均粒子径は3mmであった)。
ケイ酸塩Bに富田製薬株式会社製のケイ酸カルシウムである「ブリスコールCAS―30S」を使用した(平均粒子径は120μm)。
ケイ酸塩Cには富田製薬株式会社製のケイ酸カルシウムである「フローライトR」を使用した(平均粒子径は20μm)。
ケイ酸塩Dには富田製薬株式会社製のケイ酸マグネシウムである「ブリスコールMT」を使用した(平均粒子径は150μm)。
ケイ酸塩Eには富田製薬株式会社製のケイ酸マグネシウムである「ブリスコールSMD」を使用した(平均粒子径は100μm)。
ケイ酸塩Fには水澤化学工業株式会社製のケイ酸マグネシウムである「ミズカライフF-2G」を使用した(平均粒子径は150から200μm)。
ケイ酸塩Gには富士シリシア株式会社製の二酸化ケイ素である「サイロピュート71R」を使用した(平均粒子径は100μm)。
ケイ酸塩Hには水澤化学工業株式会社製の活性白土である「ガレオンアースNVZ」を使用した(平均粒子径は39μm)。
ケイ酸塩Iには昭和化学工業株式会社製の珪藻土である「ラヂオライト#100」を使用した(平均粒子径は20μm)。
ケイ酸塩Jには日本タルク株式会社製のタルクである「食添タルクMS」を使用した(平均粒子径は14μm)。
ケイ酸塩Kにはケイ酸塩Cを湿式粉砕したものを使用した(粉砕後の平均粒子径は1.5μmであった)。
ケイ酸塩Lにはケイ酸塩Eを、ケイ酸塩Kと同様の条件にて湿式粉砕したものを使用した(粉砕後の平均粒子径は1.2μmであった)。
ケイ酸塩Mにはケイ酸塩Fを、ケイ酸塩Kと同様の条件にて湿式粉砕したものを使用した(粉砕後の平均粒子径は1.0μmであった)。
ケイ酸塩Nにはケイ酸塩Gを、ケイ酸塩Kと同様の条件にて湿式粉砕したものを使用した(粉砕後の平均粒子径は1.0μmであった)。
パルミチン酸にはキシダ化学株式会社製を使用した。

(結果)
 固化促進対象の油脂である精製パーム油に対して(比較例1-1)、パルミチン酸のみを配合した場合、精製パーム油の固化促進は確認されなかった(比較例1-2)。各種ケイ酸塩とパルミチン酸を精製パーム油に共存させた場合、固化促進は確認されなかった(比較例1-3から1-5)。また、固化促進効果が開示されているケイ酸塩Jとパルミチン酸を共存させた場合、精製パーム油の固化促進は認められたが、効果は弱かった(比較例1-6)。
 一方、ケイ酸塩Bからケイ酸塩Gとパルミチン酸を精製パーム油に共存させた場合、精製パーム油の顕著な固化促進が確認された(実施例1-1から1-6)。この効果は、ケイ酸塩Jの固化促進効果を超えるものであった。これら固化速度で得られた結果の傾向は、DSC評価でも同様であった。
 湿式粉砕したケイ酸塩とパルミチン酸を配合した場合、顕著な固化促進効果を示した(実施例1-8、1-9、1-11、1-12)。湿式粉砕したケイ酸塩のみを精製パーム油に配合しても、固化促進が確認された(実施例1-7、1-10)。
 また、各ケイ酸塩の脂肪酸吸着率について、ケイ酸塩Aやケイ酸塩H、ケイ酸塩I、ケイ酸塩Jの脂肪酸吸着率はいずれも2%以下であった。一方で、ケイ酸塩Bからケイ酸塩Gの脂肪酸吸着率は8%以上で、ケイ酸塩Bが最も脂肪酸吸着率が高かった。これらケイ酸塩を湿式粉砕処理したケイ酸塩Kからケイ酸塩Nの脂肪酸吸着率も同様に8%以上であった。
(考察)
 ケイ酸塩とパルミチン酸を固化促進対象の油脂に共存させた時の固化促進効果は、ケイ酸塩の脂肪酸吸着率が関係し、ケイ酸塩の脂肪酸吸着率が高いほど油脂の固化は促進される傾向にあると考えられた。

 固化方法は検討1を踏襲し、表3の配合に従って実施した。
(評価方法)
 評価方法は検討1を踏襲した。

ラウリン酸、ステアリン酸、オレイン酸、アラキジン酸、ベヘン酸にはキシダ化学株式会社製を使用した。
(結果)
 各種遊離脂肪酸のみを精製パーム油に配合した場合、精製パーム油の固化促進は確認されなかった(比較例2-1から2-5)。これらに対して、脂肪酸吸着率の高いケイ酸塩Kと共に各種遊離脂肪酸を精製パーム油に共存させると、顕著な固化促進が認められた(実施例2-1から2-5)。
<検討3>
(固化方法)
 固化方法は検討1を踏襲し、表4の配合に従って実施した。なお、脂肪酸除去精製パーム油は次のように調製した。精製パーム油に対し、サイロピュート71R(富士シリシア株式会社製)を10重量%添加し、60℃で60分間攪拌処理を行ったあと、60℃環境下で濾別した。この濾液を脂肪酸除去精製パーム油とし、脂肪酸含量は0.000%であった。
(評価方法)
 評価方法は検討1を踏襲した。

(結果)
 ケイ酸塩K及びパルミチン酸が無添加の精製パーム油と比較して(比較例3-1)、脂肪酸を除去した精製パーム油の固化促進は確認されなかった(比較例3-2)。また、精製パーム油にパルミチン酸のみを添加しても、固化促進は認められなかった(比較例3-3)。
 脂肪酸を除去した精製パーム油にケイ酸塩Kを添加しても、油脂の固化促進は確認されなかったのに対し(比較例3-4)、精製パーム油にケイ酸塩Kを添加すると、固化促進が確認された(実施例3-1)。
 精製パーム油に所定量のケイ酸塩Kとパルミチン酸、あるいはケイ酸塩Kを添加して、精製パーム油にて所定の比率で共存させると、精製パーム油の著しい固化促進が確認された(実施例3-2から実施例3-23)。特に、ケイ酸塩Kの配合量が1重量%以上で、かなり顕著に固化促進が認められた。また、脂肪酸含量の総量が0.029重量%以上で固化促進効果は大きかった。
<検討4> 
(固化方法)
 固化方法は検討1を踏襲し、表5の配合に従って実施した。なお、油脂中の遊離脂肪酸含量の算出は検討1を踏襲し、カカオ脂、精製カカオ脂、カカオマス抽出油共にオレイン酸として遊離脂肪酸量を算出した。
(評価方法)
 本検討の固化速度の測定において、設定時間内にSFCの終点が得られなかったため、評価はDSCのみとし、評価点が2点以上のものを合格とした。

カカオ脂には不二製油株式会社製「ココアバター 201」を使用した。
精製カカオ脂には不二製油株式会社製「ココアバター 201」を、定法に従って精製したものを使用した。
カカオマス抽出油には不二製油株式会社製「GB100」を濾紙(No.5C)で濾過した濾液を使用した。
 (結果)
 遊離脂肪酸を含むカカオ脂、カカオ脂を精製して遊離脂肪酸の大半を除去した精製カカオ脂において、これらにケイ酸塩Kとパルミチン酸を共存させることで、著しい固化促進が認められた(実施例4-1、4-2)。これは、油脂中の遊離脂肪酸の有無に関わらず、固化促進対象の油脂へ、脂肪酸吸着能を有するケイ酸塩とパルミチン酸を共存させることで、固化促進効果が得られることが明らかとなった。
 元々油脂に遊離脂肪酸を含むカカオマス抽出油において、カカオマス抽出油にケイ酸塩Kのみを配合すると、カカオマスの著しい固化促進が確認された(実施例4-3)。この結果は、固化促進対象の油脂に遊離脂肪酸があり、脂肪酸吸着能を有するケイ酸塩を固化促進対象の油脂に配合することでも、その油脂の固化を促進できることを示したものと言える。
<検討5>
(固化方法)
 固化方法は検討1を踏襲し、表6の配合に従って実施した。なお、油脂中の脂肪酸含量の算出は検討1を踏襲し、CBEはオレイン酸として、パーム中融点油、エステル交換反応油はパルミチン酸として、ヤシ油、ラウリン脂はラウリン酸として遊離脂肪酸量を算出した。
(評価方法)
 評価方法は検討3を踏襲した。

CBE(Cocoa Butter Equivalent)には不二製油株式会社製「メラノ NEW.SS-7」を使用した。
パーム中融点油には不二製油株式会社製「ユニショートMJ」を使用した。
ヤシ油には不二製油株式会社製「精製ヤシ油」を使用した。
ラウリン脂には不二製油株式会社製「パルケナH」を使用した。
エステル交換反応油には不二製油株式会社製「メラノNT-R」を使用した。
(結果)
 各油脂へのケイ酸塩Kとパルミチン酸の共存がない場合と比較して(比較例5-1から5-5)、ケイ酸塩Kとパルミチン酸を各油脂に共存することで、それぞれの油脂の固化促進が確認された(実施例5-1から5-5)。脂肪酸吸着能を有するケイ酸塩と脂肪酸が固化促進対象の油脂に共存することによる固化促進効果は、種々の油脂に利用可能であることが明らかとなった。
<検討6>
(固化促進剤の調製)
 検討サンプル1から検討サンプル5までの固化促進剤を調製した。各検討サンプルのケイ酸塩Kとパルミチン酸の濃度を表7に示した。
(検討サンプル1)
 固化促進対象の油脂と同じ油脂を別途用意し、2重量部のケイ酸塩Cを、80℃以上で完全融解した精製パーム油98重量部に添加し、80℃以上で完全融解した後、80℃環境下で検討1の「○ケイ酸塩の湿式粉砕方法」に従い、粉砕した。この粉砕溶液を遠心分離し(3000×gで30分間)、上清80重量部をスポイトで除いた。沈殿を含む残分20重量部を、検討サンプル1の固化促進剤とした。
(検討サンプル2)
 固化促進対象の油脂と同じ油脂を別途用意し、2重量部のケイ酸塩Cを、80℃以上で完全融解した精製パーム油98重量部に添加し、80℃以上で完全融解した後、80℃環境下で検討1の「○ケイ酸塩の湿式粉砕方法」に従い、粉砕した。この粉砕溶液を遠心分離し(3000×gで30分間)、上清90重量部をスポイトで除いた。沈殿を含む残分10重量部を、検討サンプル2の固化促進剤とした。
(検討サンプル3)
 固化促進対象の油脂と同じ油脂を別途用意し、2重量部のケイ酸塩Cを、80℃以上で完全融解した精製パーム油98重量部に添加し、80℃以上で完全融解した後、80℃環境下で検討1の「○ケイ酸塩の湿式粉砕方法」に従い、粉砕した。この粉砕溶液を遠心分離し(3000×gで30分間)、上清82重量部をスポイトで除いた。沈殿を含む残分18重量部に対し、2重量部のパルミチン酸を加えて合計20重量部とし、80℃以上でパルミチン酸を溶解させ、ボルテックスミキサーで混合させた溶液を、検討サンプル3の固化促進剤とした。
(検討サンプル4)
 固化促進対象の油脂と同じ油脂を別途用意し、2重量部のケイ酸塩Cを、80℃以上で完全融解した精製パーム油98重量部に添加し、80℃以上で完全融解した後、80℃環境下で検討1の「○ケイ酸塩の湿式粉砕方法」に従い、粉砕した。この粉砕溶液を遠心分離し(3000×gで30分間)、上清92重量部をスポイトで除いた。沈殿を含む残分8重量部に対し、2重量部のパルミチン酸を加えて合計10重量部とし、80℃以上でパルミチン酸を溶解させ、ボルテックスミキサーで混合させた溶液を、検討サンプル4の固化促進剤とした。
(検討サンプル5)
 2重量部のケイ酸塩Cを80℃以上で完全融解したパルミチン酸98重量部に添加し、80℃環境下で検討1の「○ケイ酸塩の湿式粉砕方法」に従い、粉砕した。この粉砕溶液を遠心分離し(3000×gで30分間)、上清80重量部をスポイトで除いた。沈殿を含む残分20重量部を、検討サンプル5の固化促進剤とした。
(検討サンプル6から8)
 検討サンプル4と同濃度の固化促進剤を、ヤシ油、カカオマス抽出油、エステル交換反応油にて調製した。

(固化方法)
 表8の配合に従って、80℃以上で完全融解した各油脂と固化促進剤を混合し、80℃以上でこれらを完全融解した上で、凝集物が目視で確認できなくなるまでボルテックスミキサーにより十分に混合した。得られた混合液を直ちに固化速度の測定(SFC)及びDSC測定に供した。
(評価方法)
 評価方法は検討1を踏襲した。なお、種々の油脂への固化促進剤の配合検討において、固化速度の測定での設定時間内にSFCの終点が得られなかったため、評価はDSCのみとし、評価点が2点以上のものを合格とした。

(結果)
 固化促進剤無配合(比較例6-1)と比較して、ケイ酸塩Kを含む固化促進剤である検討サンプル1または2を精製パーム油に配合すると、精製パーム油の固化促進が確認された(実施例6-1から6-5)。またケイ酸塩Kとパルミチン酸を含む固化促進剤の検討サンプル3または4を精製パーム油に配合しても、精製パーム油の固化の促進が確認された(実施例6-6から6-10)。さらには、検討サンプル5のように、ケイ酸塩Kとパルミチン酸のみの固化促進剤においても、精製パーム油に配合することで、固化促進が認められた(実施例6-11、6-12)。
 また、ケイ酸塩Kとパルミチン酸を含む固化促進剤の検討サンプル6から8を種々の油脂に配合すると、無配合と比較して(比較例6-2から6-4)、各油脂の固化促進が確認された(実施例6-13から6-15)。
 脂肪酸吸着能を有するケイ酸塩と脂肪酸を含有するような本発明で言う固化促進剤は、固化促進対象の油脂に添加するだけで、その油脂の固化を促進させることができる。そして、固化促進剤の使用時の固化促進効果は、固化促進対象の油脂に直接ケイ酸塩と脂肪酸を共存させた時と同程度の効果が得られ、簡便に固化を促進できる、油脂用固化促進剤が提供することができる。

Claims (9)

  1. 下記(A)及び(B)を固化促進対象の油脂に共存させる、油脂の固化促進方法。
    (A)使用時の平均粒子径における脂肪酸吸着率が8%以上であるケイ酸塩
    (B)油脂中0.01重量%以上5.0重量%以下である遊離脂肪酸
  2. 該遊離脂肪酸が、炭素数12から24の飽和脂肪酸である、請求項1に記載の油脂の固化促進方法。
  3. 該遊離脂肪酸が、炭素数12から24の不飽和脂肪酸である、請求項1に記載の油脂の固化促進方法。
  4. 該遊離脂肪酸が、炭素数12から24の飽和脂肪酸及び炭素数12から24の不飽和脂肪酸の混合物である、請求項1に記載の油脂の固化促進方法。
  5. 該ケイ酸塩が非晶質シリカである、請求項1から4のいずれか1項に記載の油脂の固化促進方法。
  6. 該遊離脂肪酸と、該ケイ酸塩との共存比(A/B比)が、0.001以上50以下である、請求項1から5のいずれか1項に記載の油脂の固化促進方法。
    但し、Aは該遊離脂肪酸(重量%)、Bは該ケイ酸塩量(重量%)をさす。
  7. 該ケイ酸塩が、固化促進対象の油脂に対し、0.05重量%以上5.0重量%以下となるように添加する、請求項1から6のいずれか1項に記載の油脂の固化促進方法。
  8. 請求項1から7のいずれか1項に記載の油脂の固化促進方法に使用する、該ケイ酸塩を含有する、油脂用固化促進剤。
  9. 製造工程に固化工程を有し、該固化後に分別する油脂の製造方法において、請求項1から7のいずれか1項に記載の油脂の固化促進方法を用いることで固化を促進し、固化後の分別終了までの時間を短縮する、油脂の製造方法。
