Abstract

La presente se refiere a un aceite de girasol directamente obtenido a partir de semillas de girasol con al menos 12% de ácido esteárico con referencia al contenido total de ácidos grasos caracterizado porque el coeficiente alfa de distribucion de ácidos grasos entre las posiciones sn-1 y sn-3 es de al menos 0,38 y a un aceite de girasol directamente obtenido a partir de semillas de girasol con al menos 12% de ácido esteárico con referencia al contenido total de ácidos grasos, caracterizado porque el coeficiente alfa de distribucion de ácidos grasos entre las posiciones sn1- y sn-3 es de al menos 0,28 cuando el contenido de ácido oleico es mayor que el contenido de ácido linoleico, en el aceite.
