La présente invention concerne un dispositif . trancheur pour machines à diviser la pâté, dans lesquel- les la pâte est expulsée d'un entonnoir, sous la forme de houdin et est tranchée devant l'orifice de l'entonnoir par un couteau tournant dont l'accouplement avec la com- mande se fait par le boudin de pâte, par   l'intermédiaire   d'un.tringlage basculant ; l'invention consiste en ce que l'arbre du couteau est monté au moyen d'un cône annulai- re, de façon à frotter légèrement, dans la roue de com- mande tournant folle sur l'arbre et est pourvu d'un en- cliquetage pour établir une liaison rigide dans l'accou- plement de commande.

   Cet encliquetage n'est mis en ser- vice, par une butée de la voie, que pour la rotation par- tielle correspondant au sectionnementdu boudin de   pâte.',..   tandis que la mise en train et l'arrêt du mouvement   de'   rotation se font sans rigidité sous l'effet de l'accou- plement à frottement léger et que le système de fléaux   immobilisant   l'arbre du couteau est équilibré par un

 poids mobile et peut être réglé   aisément.   



   Grâce à l'équilibrage du -poids du système de fléaux, on supprime toutes les résistances, de sorte que le système bascule facilement au moindre contact du bou- din de pâte et assure une mise en service et hors servi- ce extrêmement précise et   légère   du mouvement du couteau, ainsi qu'un poids toujours constant du morceau de pâte tranché.
