Abstract

Concentré butyreux qui est un mélange modérément chauffé de 25-98% (p/p) d'une huile ou matière grasse contenant de préférence de la graisse de beurre, 2-10% (p/p) de protéine et d'hydrates de carbone pris ensemble, et 0-20% (p/p) d'adjuvants classiques. De préférence, la graisse contient au moins 25% (p/p) de graisse de beurre et le rapport de la protéine à l'hydrate de carbone est situé entre 3:1 et 1:3. Les concentrés sont utilisés comme produits de boulangerie-patisserie.
