Abstract

"PROCESSOS E COMPOSIçõES PARA FABRICAR LEITE COM SABOR". A presente invenção refere-se a composições lácteas assépticas com sabor e processos para fabricar composições lácteas assépticas com sabor, que utilizam temperaturas entre cerca de 2 e 80 <198>C (35 a 65 <198>F) . O processo usa uma mistura singular de um agente estabilizador que compreende celulose microcristalina coloidal, um agente espessante, e um aditivo, em combinação com agentes saporíferos típicos, e um ou mais outros ingredientes opcionais, tais como edulcorantes, vitaminas e minerais, para formar uma composição láctea asséptica estável com sabor, particularmente leite achocolatado para consumo como um alimento.
