Abstract
"PROCESSO E INóCULO PAPA FERMENTAçãO LáCTICA ACIDIFICANTE". O presente pedido é relativo a um novo inóculo e a suas aplicações para a produção de produtos lácteos fermentados. Esse novo inóculo é caracterizado pelo fato de que compreende pelo menos um fermento escolhido entre os fermentos lácticos aptos a produzir o produto lácteo fermentado por fermentação láctica acidificante do substrato lácteo, e adicionalmente pelo menos uma levedura lisada.
