Abstract

"EMULSãO COMESTìVEL, MéTODO PARA FAZER UMA EMULSãO COMESTìVEL E PRODUTO ALIMENTìCIO". Uma emulsão própria para consumo com um espessante de fibra insolúvel e um emulsificante melhorador de viscosidade é descrito. A emulsão própria para consumo é apropriada para uso como uma base para fazer produtos alimentícios com um teor reduzido de óleo. Os produtos alimentícios com um teor reduzido de óleo feitos com a emulsão própria para consumo tem uma aparência aceitável para o consumidor, viscosidades e textura bem como propriedades sensoriais consistentes com os produtos alimentícios com um teor total de gordura.
