Abstract
"COMPOSTOS DE ENXOFRE PARA INTENSIFICAR O AROMA DO CAFé E PRODUTOS RESULTANTES QUE OS CONTENHAM". A presente invenção refere-se a métodos e usos de uma ou mais C~ 4~-C~ 5~ mercapto-alcanonas de cadeia linear em uma quantidade suficiente para aumentar as propriedades organolépticas de um sabor de café conferido a um alimento ou bebida. Os compostos podem ser usados para substituir ou reforçar sabores ou aromas que foram pelo menos parcialmente removidos durante a preparação de café em pó solúvel. o(s) composto(s) que confere(m) aroma pode(m) ser adicionado(s) a café em pó solúvel antes de sua incorporação ou adição ao alimento ou bebida, em uma quantidade suficiente para aumentar seu sabor de café. Produtos alimentares e bebidas contendo uma ou mais dessas substâncias que conferem aroma também estão incluídos. Dependendo de que notas de sabor e aromas se desejam no produto final, outras substâncias que conferem aroma podem ser adicionadas aos produtos alimentares e bebidas. Descobriu-se que compostos que conferem aroma adicionais particularmente adequados para uso na presente invenção são o 4-metóxi-2-metilbutan-2-tiol isoladamente ou em combinação com outros agentes de odor de café contendo enxofre.
