Abstract

PRODUTO FERMENTADO ISENTO DE LACTOSE E MéTODO DE OBTENçãO DO MESMO. A presente invenção refere-se a produtos que são fermentados com uma bactéria láctica probiótica do leite ou de uma bebida batida que compreende amêndoas (Prunus Amygdalus, var. dulcis), ou de outros frutos não-vegetais secos ou orchata obtida de tubérculos de chufa (Cyperus esculentus). Os produtos da invenção liberam os benefícios nutricionais dos frutos secos, da orchata e da adicionada bactéria probiótica, com um sabor e consistência inigualáveis e com acidez e aroma similares ao do iogurte. Opcionalmente, se o teor de açúcar for mantido baixo, os produtos terão propriedades adstringentes e de reestabelecimento da flora intestinal. Além disso, os produtos podem ser misturados com aditivos e componentes de sabores, como também enriquecidos com minerais, fibras ou oligossacarídeos, o que proporciona efeitos bifidogênicos, etc., ou podem ser pasteurizados após a fermentação. Em quase todos os casos, os produtos formam um excelente suplemento nutricional para adolescentes, atletas ou pessoas idosas.
