Abstract

COMPOSIÇÃO, MÉTODO DE PRODUZIR UMA COMPOSIÇÃO DE GOMA GELANA, CULTURA MICROBIOLOGICAMENTE PURA DE SPHINGOMONAS ELODEA, E, POLINUCLEOTÍDEO ISOLADO E PURIFICADO. Inativação mutacional de proteínas envolvidas na produção de p-cresol em certos produtos de leite resulta em gosto e odor melhorados. O para-cresol indesejável forma-se no decorrer do tempo como um resultado das enzimas produzidas pela bactéria que produz goma gelana. Visto que gelana é tipicamente usada em uma forma relativamente impura, as enzimas são adicionadas ao leite juntamente com a gelana. Inativação das enzimas é um meio genético de eliminação das enzimas sem requerimento de qualquer purificação
