Abstract
MéTODO PARA PREPARAR PROTEìNAS DE SOJA ALTAMENTE FUNCIONAIS, E, PROTEìNAS DE SOJA ALTAMENTE FUNCIONAIS Esta invenção no geral diz respeito ao processamento de materiais derivados da soja para o uso em vários produtos. Mais particularmente, a invenção diz respeito a um processo que produz proteína de soja altamente funcional usando ultrafiltração seguida por um tratamento enzimático.
