Abstract

PROCESSO E EQUIPAMENTO PARA CRISTALIZAçãO DE AçúCAR POR RESFRIAMENTO CONTROLADO. é proposto um processo para cristalização por resfriamento, progressivamente, em múltiplos estágios arranjados, em série, em um vaso (10) de cristalização, um fluxo contínuo e descendente de uma solução de sacarose saturada a uma temperatura de cerca de 78° a cerca de 120°C, cada estágio conduzindo a solução de sacarose em cristalização a uma temperatura pré- determinada até que seja alcançada uma temperatura de cerca de 25 a 40°C, obtendo cristais de sacarose substancialmente puros. Uma suspensão contendo sementes de açúcar pode ser introduzida no equipamento cristalizador, no primeiro estágio juntamente com a solução de sacarose saturada de 1,05 a 1,15. Em outra configuração da invenção, a solução saturada, é alimentada e tem sua temperatura controlada, logo no primeiro estágio do vaso (10), para obter uma supersaturação entre 1,05 a 1,15, induzindo a formação de pequenos cristais, como semente de cristalização.
