Abstract
CONCENTRADO DE COLáGENO, USO DO MESMO, BEM COMO PROCESSO PARA PRODUçãO DO MESMO. A invenção descreve um concentrado de colágeno formador de filme, que contém pelo menos 18% de substância seca, sendo que pelo menos 50% da proteína podem ser separados como sedimento de uma suspensão homogênea produzida do concentrado em um tampão de diidrofosfato de sódio aquoso, com um pH de 7 e uma parte calculatória de substância seca de 0,5% em peso por 15 mm de centrifugação a 1780 RFC, a 15°C. De preferência, ele consiste, substancialmente, em fibras de colágeno macroscopicamente visíveis. A invenção descreve, além disso, um processo para produção de um invólucro de alimento, particularmente, um invólucro de embutido artificial, sob uso de um concentrado de colágeno. O processo compreende (a) a produção de uma massa de colágeno aquosa de peles de animais ou outras fontes animais; (b) concentração da massa de colágeno aquosa, até que a mesma apresente uma parte de sólido de 18% ou mais, de preferência, de 25 a 80% em peso, em cada caso, com relação ao concentrado; (c) mistura do concentrado com ácido inorgânico e/ou orgânico aquoso, diluído, para obter uma massa de colágeno, apta para ser extrudada ou fundida; (d) moldação da massa de colágeno de (c) para um invólucro por um processo de (Co)-extrusão ou de fundição; (e) solidificação do invólucro, e opcionalmente, (f) secagem do invólucro.
