Abstract
PRODUÇÃO DE SOLUÇÕES DE PROTEÍNA SOLÚVEIS A PARTIR DE SOJA ("S701"). Um produto de proteína de soja, que pode ser um isolado, produz soluções estáveis ao calor transparentes em valores de baixo pH e é útil para a fortificação de refrescos e bebidas esportivas sem precipitação de proteína. O produto de proteína de soja é obtido ao extrair um material de fonte de proteína de soja com uma solução de sal de cálcio aquosa para formar uma solução de proteína de soja aquosa, separando a solução de proteína de soja aquosa da fonte de proteína de soja residual, ajustando o pH de aproximadamente 1,5 a aproximadamente 4,4 para produzir uma solução de proteína de soja translúcida acidificada, que pode ser seca, seguindo a concentração opcional e diafiltração, para fornecer o produto de proteína de soja.
