Abstract

L'invention concerne un procédé et un appareil pour amener les poissons à l'état surfondu. L'invention concerne un procédé amélioré selon lequel un poisson est amené dans un état surfondu par un processus de super-réfrigération avant d'être transformé, ce qui prolonge la rigidité et permet la transformation du poisson à l'état rigide, fournissant ainsi des produits à base de poisson de meilleure qualité.
