Abstract

Un proceso para preparar productos alimenticios sustitutos de carne, el proceso cuenta con los pasos de hidratar al vacío al menos una proteína vegetal mezclada con agua y al menos un colorante; mezclar al menos un producto cárnico con la mezcla de proteína vegetal hidratada y colorada; mezclar unidades de sabor y unidades de texturizado a la mezcla de productos cárnicos y proteína vegetal hidratada y colorada obteniendo una pasta preparada; cocer dicha pasta preparada; y formar dicha pasta cocida para dar presentación similar a un producto de carne. El producto alimenticio sustituto de carne obtenido de acuerdo al invento puede presentar una apariencia, por ejemplo, a bistec, a milanesa, a arrachera, a cecina, a milanesa empanizada, a arrachera empanizada, a escalope, a carne deshebrada, a carne molida, a cortadillo, a fajita o a albóndigas.
