Abstract
Se proporciona un alimento fortificado con hierro que comprende una fuente de hierro en forma de cápsulas sólidas, en donde las cápsulas comprenden un núcleo que comprende alginato de hierro, y una capa exterior que comprende alginato de calcio. Las cápsulas son adecuadas para fortificar tanto alimentos hidratados como deshidratados y se caracterizan por una excelente capacidad de carga, junto con una buena estabilidad bajo condiciones locales de almacenamiento y uso estándares. El alimento fortificado con hierro de la invención sirve para prevenir la aparición de deficiencia de hierro o para reducir una deficiencia de hierro en un humano.
