Abstract

Procedimiento para el tratamiento de semillas de quínoa y el producto obtenido. Se humedecen las semillas de quínoa para ajustar su contenido de materia seca a un valor comprendido entre el 65 y 85% ponderal, tratándolas después con vapor sobrecalentado y sometiéndolas finalmente a una expansión. Así se obtiene una semilla de quínoa que se cuece en pocos minutos.
