EL NUEVO AZUCAR CLORADO O-ALFA-D-6-CLORO-6-DESOXIGALACTOPIRANOSIL-(1-6)ALFA-D-4-CLORO-4-DESOXIGALACTOPIRANOSIL-(1-2)-BETA-D-1,6-DICLORO-1,6<<DIDESOXIFRUCTOFURANOSIDO (TCR) PUEDE EMPELARSE PARA PREPARAR SUCRALOSA, INCUBANDO EL TCR EN SOLUCION EN PRESENCIA DE UNA ENZIMA QUE SIRVA PARA SEPARAR EL GRUPO 6-CLORO-6-DESOXIGALACTOSILO DE LA POSICION 6, ESPECIALMENTE UNA ENZIMA DERIVADA DE UNA CEPA DE "MORTIERELLA VINACEA, CIRCINELLA MUSCAE O ASPERGILLUS NIGER".
