Abstract

Per una produzione di bocconcini di pane (snacks), il glutine contenuto in un impasto da pane viene idrolizzato fino a che l'impasto non presenta più alcuna elasticità residua.Una sfoglia ottenuta per successive laminazioni dell'impasto, viene poi lavorata su macchine formatrici di pasta alimentare, per ottenere formati di pane tipo farfalle, conchiglie, orecchiette e simili.
