Description

【発明の詳細な説明】 本発明は飲料の調整に対し焙煎、粉碎コーヒー
又は任意の他のアロマ物質を含有する密封カート
リツジを抽出する方法に関する。
英国特許第2123685号明細書は濾過部分を有す
る小袋中のコーヒー又は茶のような不溶解性材料
から飲料を調整する方法に関する。この小袋は密
封されていないので、濕潤、通気および抽出によ
る圧の増加はない。
１カツプのコーヒーに対し正しい量の焙煎、粉
碎コーヒーを含有する密封カートリツジからすぐ
れたエスプレツソコーヒーを調整するために、あ
る條件はカートリツジの抽出中満たされねばなら
ない。本発明に関し、カートリツジは特にCH−
PS605293によるカートリツジであると理解され
る。本発明方法はカートリツジの有効な抽出を得
るために守らねばならない特別の條件を特定す
る。
本発明は次の工程を含む密封カートリツジの抽
出方法に関する： (a) ２〜３Kg/cm2の圧で上部からカートリツジに
予備濕潤水を導入し、 (b) ３〜６Kg/cm2の圧で粉碎コーヒー又はアロマ
物質に通気するために空気を注入し、 (c) ８〜16Kg/cm2の圧で実際にカートリツジを抽
出するために水を導入し、飲料は下部のカート
リツジから回収する。
粉碎コーヒーが使用される場合、エスプレツソ
コーヒーは本発明に従つて調整できる。
本発明に関し、アロマ物質は抽出できる任意の
物質、すなわち茶、およびメントール、クマツヅ
ラ、カミツレ、ウイキヨウその他を含む芳香性植
物などの他の同様の物質である。
使用カートリツジは予備濕潤および抽出水およ
び通気に使用する空気の導入に対し上部から孔が
あけられる。下部にはフイルターおよび通気中あ
けられる弱くした線を含む膜を含み、エスプレツ
ソコーヒー又は調整飲料が流出できる。
予備濕潤段階で、水はカートリツジに入り、コ
ーヒーを膨張させる。この水はゆるく包装された
粉碎コーヒー中にゆつくり拡がり、その流れは尚
もとのままの膜によつて阻止される。粉碎コーヒ
ーの各粒は制限されることなく膨張し、自由に容
積を増加する。こうして粉碎コーヒーは均一に濕
潤し、さらにすべての揮発性アロマは膜が開く前
に予備濕潤水に吸収される。予備濕潤時間は２〜
４秒である。
通気段階はすぐれたエスプレツソコーヒーを得
るのに必須である。
正しく濕潤された粉碎コーヒーは利用できる全
容積を占め、空気の通過に対し抵抗を与える。空
気摩擦係数は水のものより非常に低いので空気は
粉碎コーヒー中を急速に通過し、特に容積全体に
均一に拡散する。空気によつて開かれた通路は抽
出水に対する非常に多数の小潅注通路である。抽
出水による加圧下の空気容積はカートリツジ中で
圧縮され、粉碎により通過できるように残された
すき間に浸透し、粉碎コーヒー粒の表面の空所に
まで入る。空気圧は破断抵抗より大きい力をカー
トリツジ膜に適用する場合、弱くした線に沿つて
裂け、空気容積部分は急に外側に膨張し、カート
リツジの圧力は急激に減少する。通気段階はアロ
マコーヒー油の抽出増加に有用であり、カートリ
ツジのフイルターを通過することにより水中油型
エマルジヨンが空気により得られる。
最終段階で、抽出水は初めは僅かな低圧力で潅
注通路を通過する。この後粒子上の水の摩擦力は
コーヒーを圧縮し、抽出圧は指数的に増大する。
圧縮力は水に随伴する空気の膨張により生ずる潅
注通路の膨脹力によるバランスである場合、この
圧力の増加は停止する。従つて抽出は一定圧で継
続され、水は至適條件ですべてのコーヒー粒を抽
出する。この最終段階の期間は20秒より短かい。
こうして得たエスプレツソコーヒーは空気−コー
ヒー混合物およびコーヒーに溶解した空気の画分
によりクリーム状で、黄金色の泡を有する。
本発明によれば、予備濕潤および通気工程は随
伴して、又は交互に行なうことができる。同様の
ことは通気および抽出工程にも適用される。
本発明方法は短縮した抽出時間で密封カートリ
ツジ中の予備濕潤を通して焙煎により生成するす
べてのアロマが完全のまま残り、そしてコーヒー
に捕集されたかなりの容量の空気を有する高品質
エスプレツソコーヒーを得る。

Claims (1)

  1. 【特許請求の範囲】 １ 飲料調整用の焙煎、粉碎コーヒー又は任意の
    他のアロマ物質を含有する密封カートリツジを抽
    出する方法において、次の工程： (a) ２〜３Kg/cm2圧で一定量の予備濕潤水を上部
    からカートリツジに導入し、 (b) 空気を注入して、３〜６Kg/cm2圧で粉碎コー
    ヒー又はアロマ物質に通気し、 (c) ８〜16Kg/cm2圧で実際にカートリツジを抽出
    するために水を導入し、飲料を下部のカートリ
    ツジから回収する、 ことを特徴とする、上記抽出方法。 ２ エスプレツソコーヒーを調整するために使用
    する、特許請求の範囲第１項記載の方法。 ３ 予備濕潤および通気工程は随伴して、又は交
    互に行なう、特許請求の範囲第１項又は第２項記
    載の方法。 ４ 通気および抽出工程は随伴して、又は交互に
    行なう、特許請求の範囲第１項から第３項のいず
    れか１項に記載の方法。 ５ 予備濕潤工程は２〜４秒、通気工程は約１秒
    および抽出工程は20秒より短かい時間継続する、
    特許請求の範囲第１項又は第２項記載の方法。 ６ 下部からカートリツジの開封は通気工程中行
    なう、特許請求の範囲第１項から第５項のいずれ
    か１項に記載の方法。
