Description

【発明の詳細な説明】 本発明は焙煎粉砕コーヒー又は飲料製造用の任意の他の
アロマ物質を含有する密閉カートリッジの抽出方法に関
する。
１カツプのコーヒーに対し正しい量の焙煎粉砕コーヒー
を含有する密閉カートリッジからすぐれたエスプレツソ
コーヒーを調製するために、力一トリツジの抽出中ある
條件が満たされねばならない。本発明に関連した、カー
トリッジは特にＣＨ−ＰＳ　　６０５２９３号明細書記
載のカートリッジであると理解される。本発明方法はカ
ートリッジの有効な抽出を得るために守らねばならない
特別の條件を特定する。
本発明は次の工程： ａ）　予備湿潤水量を上部からカートリッジに導入し、 ｂ）　空気を注入して粉砕コーヒー又はアロマ物質に通
気し、 Ｃ）　水をカートリッジの実際の抽出に対し導入し、飲
料は下部からカートリッジから回収する、 を含むカートリッジの抽出方法に関する。
粉砕コーヒーが使用される場合、エスプレツソコーヒー
は本発明に従って調製できる。
本発明に関連して、アロマ物質は抽出できる任意の物質
、すなわち茶およびメントール、クマッヅラ、カミツレ
、ウィキョウなどを含むアロマ性植物のような他の同様
の物質でよい。
使用カートリッジは予備湿潤水および抽出水、および通
気に使用する空気の導入に対し上部から穴をあける。こ
の下部部分には、通気段階中開く弱くしたラインを組み
こんだ膜を含み、こうしてエスプレツソコーヒー又は調
製飲料を流出させることができる。
予備湿潤段階で水をカートリッジに入れ、コーヒーを膨
潤させる。この水はゆるく充填した粉砕コーヒー全体に
ゆっくり広がり、その流れは尚完全な膜により阻止され
る。粉砕コーヒーの各粒子は何の制限もなく彫版し、自
由に容積を増大させる。こうして粉砕コーヒーは一様に
吸水し、さらにすべての揮発性アロマは膜が開く前に予
備湿潤水により吸収される。予備湿潤段階の時間は２〜
４秒である。
通気段階は良質のエスプレツソコーヒーを得るには必須
である。
正確に吸水した粉砕コーヒーは利用できる全容積を占め
、空気の通過に抵抗を与える。空気の摩擦係数は水のも
のより非常に低いので、空気は急速に粉砕コーヒーを通
り、特に容積全体に一様に拡散する。空気により開放さ
れた通路は抽出水に対し非常に多数の潅注水路である抽
出水による加圧下で空気容積はカートリッジ内に圧縮さ
れ、粉砕により自由に残されたすべてすき間に浸透し、
粉砕コーヒー粒の表面の空所にさえ入る。空気の圧力が
その破壊抵抗より大きい力をカートリッジ膜に適用する
場合、弱くしたラインに沿って裂け、空気容積の部分は
急激に外側に彫版し、その時にカートリッジ内の圧力が
減少する。通気段階は約１秒続行する。
最終段階では、抽出水は最初にごく低圧下の潅注水路を
通過する。その後、粒子上の水の摩擦力はコーヒーを圧
縮し、抽出圧は指数的に増大する。
この圧は圧縮力が水に随伴する空気の彫版により生ずる
潅注水路の膨張力によりバランスされる場合増加を停止
する。こうして抽出は一定圧で続き、水はすべてのコー
ヒー粒を最適條件下で抽出する。
この最終段階の時間は２０秒より短かい。こうして得た
エスブレンソコーヒーはクリーム状で、空気−コーヒー
混合物による黄金色の泡およびコーヒーに溶解した空気
フラクションを有する。
本発明によれば予［４潤および通気工程は付随して、又
は交互に行なうことができる。通気および抽出工程にも
同じことが適用できる。
カートリッジ内の圧力はこれらの、上記段階中変化する
二予備湿潤に対する水圧は２〜３　ｋｇ／　０ｍ２、通
気に対する空気圧は３〜６　ｋＧ／　０ｍ２および抽出
に対する水圧は８〜１３　ｋＱ／　０ｍ２である。
本発明方法は密封カートリッジ内に予備湿潤を通して完
全のまま残る焙煎により生成したすべてのアロマおよび
コーヒーに捕捉された空気のがなりの容積を有する高品
質のエスプレッソコーヒーをより短時間に抽出できる。

Claims (7)

    【特許請求の範囲】
  1. （１）密封カートリッジ内の焙煎粉砕コーヒー又は飲料
    製造用の他の任意のアロマ物質の抽出方法において、次
    の工程： ａ）予備湿潤水量を上部からカートリッジに導入し、 ｂ）空気を注入して粉砕コーヒー又はアロマ物質に通気
    し、 ｃ）水をカートリッジの実際の抽出に対し導入し、飲料
    は下部からカートリッジから回収することを特徴とする
    、上記方法。
  2. （２）エスプレツソコーヒーを調製するために使用する
    、特許請求の範囲第１項記載の方法。
  3. （３）予備湿潤および通気工程は付随して、又は交互に
    行なう、特許請求の範囲第１項又は第２項記載の方法。
  4. （４）通気および抽出工程は付随して又は交互に行なう
    、特許請求の範囲第１項から第３項のいずれか１項に記
    載の方法。
  5. （５）予備湿潤工程は２〜４秒、通気工程は約１秒およ
    び抽出工程は２０秒より短かい時間続ける、特許請求の
    範囲第１項または第２項記載の方法。
  6. （６）カートリッジ内で予備湿潤に対する水圧は２〜３
    ｋｇ／ｃｍ＾２、通気に対する空気圧は３〜６ｋｇ／ｃ
    ｍ＾２および抽出に対する水圧は８〜１３ｋｇ／ｃｍ＾
    ２である、特許請求の範囲第１項から第５項のいずれか
    １項に記載の方法。
  7. （７）カートリッジの下部からの開口は通気工程中行な
    う、特許請求の範囲第１項から第６項のいずれか１項に
    記載の方法。
