Description

【発明の詳細な説明】 本発明は飲料の調整に対し焙煎、粉砕コーヒー又は任意
の他の７１コマ物質を含有する密封カートリッジを抽出
する方法に関する。
英国特許第２．１２３．．６８５号明細書は濾過部分を
有する小袋中のコーヒー又は茶のような不溶解性材料か
ら飲料を調整する方法に関する。この小袋は密封されて
いないので、温潤、通気および抽出による圧の増加はな
い。
１カツプのコーヒーに対し正しい量の焙煎、粉砕コーヒ
ーを含有する密封カートリッジからすぐれたエスプレツ
ソコーヒーを調整するために、ある條件はカートリッジ
の抽出中溝たされねばならない。本発明に関し、カート
リッジは特にＣＨ−ＰＳ　　６０５．２９３によるカー
トリッジであると理解される。本発明方法はカートリッ
ジの有効な抽出を得るために守らねばならない特別の條
件を特定する。
本発明は次の工程を含む密封カートリッジの抽出方法に
関する： （０２〜３Ｋｇ／ｃ＃＋２の圧で上部からカートリッジ
に予備濕潤水を導入し、 ０３〜６　Ｋ９　／　ｃｙａ　２の圧で粉砕コーヒー又
はアロマ物質に通気するために空気を注入し、（（１８
〜１６ｋｇ／ｃｍ２の圧で実際にカートリッジを抽出す
るために水を導入し、飲料は下部のカーｉ・リッジから
回収する。
粉砕コーヒーが使用される場合、エスプレツソコーヒー
は本発明に従って調整できる。
本発明に関し、アロマ物質は抽出できる任意の物質、す
なわち茶、およびメントール、クマツヅラ、カミツレ、
ウィキョウその他を含む芳香性植物などの他の同様の物
質である。
使用カートリッジは予備濕潤および抽出水および通気に
使用する空気の導入に対し上部から孔があけられる。下
部にはフィルターおよび通気中あけられる弱くした線を
含む躾を含み、エスプレツソコーヒー又は調整飲料が流
出できる。
予備濕潤段階で、水はカートリッジに入り、コーヒーを
膨張させる。この水はゆるく包装された粉砕コーヒー中
にゆっくり拡がり、その流れは尚もとのままの膜によっ
て阻止される。粉砕コーヒーの各粒は制限されることな
く膨張し、自由に容積を増加する。こうして粉砕コーヒ
ーは均一に温潤し、さらにすべての揮発性アロマは膜が
開く萌に予１ｆｉ滌潤水に吸収される。予備湿潤時間は
２〜４秒である。
通気段階はすぐれたエスプレツソコーヒーを得るのに必
須である。
正しく温潤されたｌ）砕コーヒーは利用できる全容積を
占め、空気の通過に対し抵抗を与える。空気摩擦係数は
水のものより非常に低いので空気は粉砕コーヒー中を急
速に通過し、特に容積全体に均一に拡散する。空気によ
って開かれた通路は抽出水に対する非常に多数の小潅注
通路である。抽出水による加圧下の空気容積はカートリ
ッジ中で圧縮され、粉砕により通過できるように残され
たすき間に浸透し、粉砕コーヒー粒の表面の空所にまで
入る。空気圧は破断抵抗より大きい力をカートリッジ膜
に適用する場合、弱くした線に沿って裂け、空気容積部
分は急に外側に膨張し、カートリッジの圧力は急激に減
少する。通気段階はアロマコーヒー油の抽出増加に有用
であり、カートリッジのフィルターを通過することによ
り水中油型エマルジ」ンが空気により得られる。
最終段階で、抽出水は初めは僅かな低圧下で潅注通路を
通過する。この後粒子上の水の摩擦力はコーヒーを圧縮
し、抽出圧は指数的に増大する。
圧縮力は水に随伴する空気の膨張により生ずる潅注通路
の膨張力によるバランスである場合、この圧力の増加は
停止する。従って抽出もよ−・定圧で継続され、水は至
適條件ですべてのコーヒー粒を抽出する。この最終段階
の期間は２０秒より短かい。
こうして得たエスプレツソコーヒーは空気−コーヒー混
合物およびコーヒーに溶解した空気の両分によりクリー
ム状で、黄金色の泡を有する。
本発明によれば、予備濕潤および通気工程は随伴して、
又は交互に行なうことができる。同様のことは通気およ
び抽出工程にも適用される。
本発明方法は短縮した抽出時間で密封カートリッジ中の
予備濕潤を通して焙煎により生成するすべてのアロマが
完全のまま残り、そしてコーヒーに捕集されたかなりの
容量の空気を有する高品質エスプレツソコーヒーを得る
。

Claims (6)

    【特許請求の範囲】
  1. （１）飲料調整用の焙煎、粉砕コーヒー又は任意の他の
    アロマ物質を含有する密封カートリッジを抽出する方法
    において、次の工程： （ａ）２〜３Ｋｇ／ｃｍ＾２圧で一定量の予備濕潤水を
    上部からカートリッジに導入し、 （ｂ）空気を注入して、３〜６Ｋｇ／ｃｍ＾２圧で粉砕
    コーヒー又はアロマ物質に通気し、 （ｃ）８〜１６Ｋｇ／ｃｍ＾２圧で実際にカートリッジ
    を抽出するために水を導入し、飲料を下部のカートリッ
    ジから回収する、 ことを特徴とする、上記抽出方法。
  2. （２）エスプレツソコーヒーを調整するために使用する
    、特許請求の範囲第１項記載の方法。
  3. （３）予備濕潤および通気工程は随伴して、又は交互に
    行なう、特許請求の範囲第１項又は第２項記載の方法。
  4. （４）通気および抽出工程は随伴して、又は交互に行な
    う、特許請求の範囲第１項から第３項のいずれか１項に
    記載の方法。
  5. （５）予備濕潤工程は２〜４秒、通気工程は約１秒およ
    び抽出工程は２０秒より短かい時間継続する、特許請求
    の範囲第１項又は第２項記載の方法。
  6. （６）下部からカートリッジの開封は通気工程中行なう
    、特許請求の範囲第１項から第５項のいずれか１項に記
    載の方法。
