Description
【発明の詳細な説明】 本発明はγ−ピロン誘導体配合飼料投与による養殖赤色
魚介類の体色の黒変防止又は復色方法に関する。さらに
詳細には紫外線の影響による赤色魚介類の体色の黒変を
防止するため、麹、酸、コメン酸、ピロコメン酸及びそ
れらのエスエル類、マルトール、エチルマルトール、ヒ
ドロキシマルトール（３−ヒドロキシ−２−ヒドロキシ
−メチル−４(H)−ピラン−４−オン）などのピロン誘
導体を飼育海水、淡水又は飼料に配合して投与すること
により養殖中の赤色魚介類の体表面色を、紫外線照射に
よる黒変から防止し、もしくは元の色へ復色する方法に
関する。

により養殖中の赤色魚介類の体表面色を、紫外線照射に
よる黒変から防止し、もしくは元の色へ復色する方法に
関する。

特にえび類、魚類特に鯛類の体表面黒変が本発明の対象
となる。

してのカロチノイドとメラミンの意義については近年益
々知見が増大してきている。

ヒトに於ては皮膚、毛髪の色は共にメラニン色素に専ら
支配され、人種問題の生物学的要因の一つとして重視さ
れるばかりでなく、肝斑、ソバカス、日やけなどの生起
との関連も注目されている。

甲殻類、魚類、鳥類、その他の動物に於てはカロチノイ
ドが体色の色素として重要な意義を有するものが多く、

も、次第に明らかにされようとしている。このことは有
色食品、例えばえび、鯛などの養殖、保存などの上で体
色の変化として重要な経済的問題を提起している。

本発明は長い間、メラニン色素とカロチノイド類の研究
にかかわってきたが、上述の諸問題にも解決策をもとめ
て長い試行錯誤の後、本発明に完成したのである。

参考例 ０．０５％のＬ−ドーパ水溶液（pH７．０りん酸バッフ
ァー）に空気を劇しく吹きこみ、液の黒変を４７０ｎｍ
の波長の吸収によって測定する。この反応はドーパ−メ
ラニンの生成を示すもので、室温に於ては約３日間で反
応が終了する。

水にかえし、紫外線を照射すると速やかに黒色が快復し
たが、その際γ−ピロン誘導体を０．１％加えると、金
魚の黒化は著しく抑制された。この抑制作用はマルトー
ルが最も顕著であった。

赤色の鯛の紫外線による体色の黒化は商品価値を著しく
低下させるものであるが、紫外線の照射のため水槽中の

実施例２ 車えびの体色に及ぼすγ−ピロンの影響 車えびを浅い人工海水中で飼育し、紫外線を照射すると
体色が著しく黒変する。これはメラニン形成が高まるた
