Abstract

PURPOSE: To manufacture tea capable of providing the natural flavor in a short time while maintaining the normal conditions of tea leaves, by rubbing and breaking leaves with a controlled moisture content.
CONSTITUTION: The leaves with a moisture content controlled at about 20W40% are rubbed and broken so that the cells and tissues of leaves may be scratched and the veins and fibrous layers with slight damage may connect to one another still in the form of leaves without powdering. The broken leaves are dried at a low temperature of about 70°C or below and then at about 90W140°C to give the product having a flavor enhanced with the moderate fragrance by heat.
