Abstract
PURPOSE: To prepare a "tofu" composition (bean crud composition) having high nutritive value and effective to strengthen the bone tissue and tooth, by adding a specific amount of a collagen-containing calcium compound to soybean proteins.
CONSTITUTION: In the process for the preparation of soybean milk by boiling crushed soybeans in a cauldron, the soybean milk is defoamed with a proper amount of a defoaming agent comprising a collagen-containing calcium compound pasted with rapessed oil, and the defoamed milk is pressed, filterated, and coagulated with calcium sulfate with stirring. The amount of the calcium sulfate is adjusted to give 0.10W0.45 parts by weight of the collagen-containing calcuim compound per 100 parts of the soybean proteins.
