【発明の詳細な説明】[Detailed description of the invention]

本発明は、ブドウ糖を主成分とする冷凍魚バラ
ケ剤に関するものである。 冷凍魚バラケ剤とは、ブロツク凍結しても、解
凍の際、バラ凍結と同様に魚体は凍結したままバ
ラケるようにする処理剤である。冷凍魚バラケ剤
は水で希釈して水溶液にし、凍結前に魚体を該水
溶液にくぐらせて使用する。すなわち、バラケ剤
は不凍液としての働きをなすもので、不凍液で魚
の表面に薄い膜を張らせ、これを凍結すると一定
温度以下では不凍液も凍結し、従来のブロツク凍
結と同じ状態になるが、一定温度まで魚体温度が
上昇すれば、魚体表面の不凍液の薄い膜は氷→シ
ヤーベツト状氷→液体となつて、魚体は完全に凍
結状態であるにもかかわらずバラケるものであ
る。 上記冷凍魚バラケ剤は次のような目的のため使
用される。 イ 解凍時間を短縮させる。 ロ 凍結魚のまま小分けし、残つた魚は再び冷凍
庫に入れられるようにする。 ハ 流水解凍の必要をなくし、魚肉蛋白質が変性
損傷することを防止する。 ニ ドリツプの出を減少させ、品質および歩留り
を向上させる。 ホ 魚皮が弱いため凍結できなかつた小魚も、解
凍を容易にし、冷凍可能にする。 ヘ 魚体が折れたり、皮むけすることを防止す
る。 ト 一匹一匹にバラケさせ、魚体の解凍速度を平
均化し、鮮度を一定に保つようにする。 このような冷凍魚バラケ剤として、天然物、ク
エン酸ナトリウム、DL−リンゴ酸ナトリウム、
酢酸ナトリウムを成分とするものが知られてい
る。しかしながら、該冷凍魚バラケ剤は、(1)成分
に酢酸を含むため、魚体に酢酸の臭いがつき、商
品価値が低下する、(2)懸濁液であり、解凍後、魚
体にはんてんができる、(3)バラケ効果が未だ十分
でなく、解凍時間が長い、(4)コストが高い、等の
問題点を有する。 本発明者らは、上記従来技術の問題点を解決す
るため、鋭意研究した結果、ブドウ糖を主成分と
する冷凍魚バラケ剤がすぐれたバラケ効果を有
し、魚体に悪影響を与えることなく、かつ衛生的
であることを見出し、本発明を完成するに到つ
た。 すなわち、本発明は、ブドウ糖を50重量%以上
(ただし、水が含まれるときは、水以外の成分
中)含有することを特徴とする冷凍魚バラケ剤で
ある。 以下、本発明について詳細に説明する。 本発明の冷凍魚バラケ剤は、水以外の成分中、
ブドウ糖を50重量%以上含有するものである。し
たがつて、ブドウ糖単独でもよく、ブドウ糖と他
成分の混合物でもよい。また、本発明の冷凍魚バ
ラケ剤は、水で希釈して使用するものであるか
ら、製品中に水が任意の割合で含有されていても
さしつかえない。ただし、多量に水が含有される
場合は、製品の容積が増大するので好ましくな
い。製品の形態は、水を含有する場合、または他
の液体成分を含有する場合には溶液状となり、水
および他の液体成分を含有しない場合には粉末状
となる。 水以外の成分中、含有されるブドウ糖が50重量
%未満となると、後述する希釈率の範囲におい
て、バラケ効果が低下し、さらに他成分の魚体に
及ぼす影響が大となるため、本発明の目的を達成
することができない。 ブドウ糖以外の成分として食塩を含有していて
もよい。食塩は解凍時間を短縮させる効果を有す
る。 その含有量は、水以外の成分中、2〜10重量%
が好ましい。2重量%未満では食塩含有の効果が
希薄となり、10重量%を超えると魚体品質に悪影
響を及ぼす。食塩をブドウ糖に含有させる場合
は、ブドウ糖が粉末状であるときは、そのまま添
加混合すればよく、ブドウ糖が溶液として供され
るときは、食塩を適当量の水に溶解させ、水溶液
として添加混合する。 また、ブドウ糖以外の成分として、エチルアル
コール、プロピレングリコール、グリセリン、ソ
ルビツト、異性化糖、果糖、砂糖などを含有して
いてもよい。これらは、バラケ効果の低下をもた
らすことなくブドウ糖の1部を代替する効果を有
する。エチルアルコール、プロピレングリコー
ル、グリセリン、ソルビツト、異性化糖を添加混
合するためには、ブドウ糖を水溶液として提供す
る。また、果糖、砂糖は、粉末状のブドウ糖にそ
のまま添加混合すればよい。 その他、魚体品質に悪影響を与えない上記以外
の物質が含有されていてもよく、例えば公知の防
腐剤、酸化防止剤等が含有されていてもよい。 前述した通り、本発明の冷凍魚バラケ剤は水で
希釈して使用する。すなわち、上記希釈液に魚体
を浸漬した後、凍結させるようにする。バラケ剤
を希釈するに当つては、バラケ剤の濃度が、通
常、2〜30重量%、好ましくは3〜10重量%であ
る。したがつて、希釈液のブドウ糖濃度は約0.75
〜15重量%、好ましくは約1.5〜10重量%になる
ようにする。 本発明の冷凍魚バラケ剤によれば、解凍時間を
無添加のものと比べて1/3程度に短縮することが
でき、魚体の臭い、外観等に悪影響を与えること
なく、成分として毒性がなく衛生的であり、従来
品と比べてコストが安い等の効果が得られる。 以下、本発明の実施例を挙げて説明する。 実施例 1、2 下記に示す成分からなる本発明の冷凍魚バラケ
剤を得た。 (1) ブドウ糖100%(実施例1) (2) ブドウ糖:食塩=95:5で配合せしめたもの
