Abstract

La présente invention concerne un procédé de fabrication d'un produit laitier fermenté à souches comprenant les étapes successives suivantes : a) fourniture d'un produit laitier, (b) ajout d'une lactase et d'une culture de bactéries comprenant au moins une souche de bactéries lactiques thermophiles à la condition qu'elle ne comprenne aucune souche de bactéries lactiques mésophiles, et fermentation du produit laitier pour obtenir un produit laitier fermenté, et (c) séparation d'un lactosérum liquide provenant du produit laitier fermenté pour obtenir un produit laitier fermenté à souches.
