Abstract

Un método y sistema continuos para procesar carne de músculo entero emplea un alojamiento de mezclador teniendo un par de flechas giratorias paralelas localizadas en el mismo. Las flechas giratorias paralelas teniendo una pluralidad de elementos de mezclado en las mismas, tales como elementos frustocónicos, elementos de bloqueo, o elementos elipsoides. El alojamiento de mezclador tiene un extremo de entrada para recibir a los ingredientes de carne, tales como piezas de carne, solución de sal, agua, conservadores y otros aditivos tales como especies. El alojamiento de mezclador tiene una salida, la cual se separa a una distancia de la entrada, tal que la salida descargue al producto de carne de músculo entero.
