Abstract

La invención se refiere a un método para preparar un aislado de proteínas a partir de la biomasa de microalgas del género Chlorella, caracterizado por que comprende las siguientes etapas: suministro de una biomasa de microalgas producida por fermentación; lavado de la biomasa de manera que se eliminen los compuestos solubles intersticiales y concentración de la biomasa, molienda mecánica de la biomasa lavada y concentrada en un sistema de tipo triturador de bolas horizontal con el fin de producir una emulsión, desestructuración de la emulsión producida de esta manera, separación en tres fases de manera que se separe la fracción soluble de las fracciones que contienen los lípidos y restos celulares, recuperación de la fracción soluble producida de esta manera con el fin de producir el aislado de proteínas solubles, a continuación evaporación, pasteurización y atomización de dicho aislado de proteínas.
