Abstract
Przedstawiono wytwarzanie fazy tłuszczowej odpowiedniej do wytwarzania kompozycji żywnościowych, które zawierają ciekłe albo stałe cząstki trwale zdyspergowane w fazie tłuszczowej, który to sposób obejmuje wytwarzanie mieszanie 0,25% do 20% wagowych nadającego strukturę trójglicerydowego tłuszczu A z 0% do 19,75% wagowych tłuszczu trójglicerydowego C i zmieszanie z olejem roślinnym do 100%, przy czym tłuszcz A charakteryzuje się tym, że jest tłuszczem nieuwodornionym i tym, że - jego zawartość całkowicie nasyconych trójglicerydów wynosi 20% do 100% wagowych; - 80% do 100% wagowych jego reszt nasyconych kwasów tłuszczowych to reszty kwasy palmitynowego albo reszty kwasu stearynowego; - 0% do 5% wagowych jego reszt nasyconych kwasów tłuszczowych to reszty kwasu laurynowego albo reszty kwasu mirystynowego; - < 50% wagowych jego nasyconych trójglicerydów to monoacylowe trójglicerydy; i tym że tłuszcz C ma zawartość stałych składników tłuszczu w temperaturze 20°C (N<sub>20</sub>) wynosząca co najmniej 5, i zawiera mniej niż 20% wagowych reszt kwasów tłuszczowego H2M, gdzie H oznacza reszty nasyconych kwasów tłuszczowych mających długości łańcucha większe niż 15 atomów węgla, a M oznacza reszty nasyconych kwasów tłuszczowych mających długości łańcucha albo 12 14 atomów węgla.
