Abstract

Przedmiotem wynalazku jest szczep bakterii Lactobacillus buchneri A oraz wieloskładnikowy preparat do konserwowania roślin wysokoskrobiowych. Szczep Lactobacillus buchneri A został zdeponowany w Kolekcji Kultur Drobnoustrojów Przemysłowych Instytutu Biotechnologii Przemysłu Rolno-Spożywczego w Warszawie pod numerem KKP 2047 p. Wieloskładnikowy preparat charakteryzuje się tym, że kulturę starterową stanowią szczepy: Lactobacillus buchneri A KKP 2047 p, Lactobacillus plantarum K KKP 593 p, Lactobacillus plantarum S KKP 2021 p, Lactobacillus fermentum N KKP 2020 p, Lactobacillus reuteri M KKP 2048 p, przy czym stosunek wagowy poszczególnych szczepów w mieszaninie wynosi jak od 1,8 do 2,5 : od 0,8 do 1,2 : od 0,6 do 1 : od 0,8 do 1,2 : od 1 do 1,2, najkorzystniej jak 2:1:1:1:1. Ponadto opracowany preparat zawiera od 0,5 do 1% wagowego preparatu enzymów o głównych aktywnościach: endo-1,4-beta glukanase EC 3.2.1.4; beta- glukanase EC 3.2.1.6 i xylanase EC 3.2.1.8, witaminę B12 w ilości od 0,05 do 0,1% wagowych oraz nośniki i emulgator w ilości od 88 do 90% wagowych.
