Abstract
Bu bulus, yüksek miktarlarda lakotripeptid ve hipotensif ve stres rahatlatici falaliyetlere sahip bir dizi madde ihtiva eden ve kolaylikla yenebilen ve yutulabilen bir fermante süt ürünü üretme yetenegine sahip bir laktik bakteriler soyu ile ilgilidir. Daha spesifik olarak bu bulus lactobacillus helvecus cinsinden bir laktik bakteri, yani agirligin % 9'undan az olmamak üzere (kati muhteviyat açisindan ) yagsiz süt ihtiva eden hayvan sütünde kükürtlendigi zaman val-Pro-Pro açisindan 60 mg/ml'den az olmamak üzere VaPro-Pro ve/ya da Ile- Pro-Pro tripeptidlerini üretmek için özel mikolojik özelliklere sahip olmasi ile karekterize edilen ve 400 U/OD 590'dan daha az olmayan bir hücre disi proteaz faaliyeti gösteren Lactobacillus helveticus soy CM4 (National Institute of BBioscience and Human Technology nezdinde FERM PB-6060 erisim numarasi altinda tevdi edilmis); ve hayvan sütünü yukarida bahsedilen laktik bakteri ile fermante ederek hazirlanan bir fermante süt ürünü ile ilgilidir.
