Abstract
Buluş, karabaş otu bitkisinin yıkanıp güneşte kurutulmasını takiben, kurutulmuş bitkinin özütünün etil alkol yöntemiyle çıkarılarak elde edilen Karabaş Otu Özütü, Yoğurt üretiminin mayalanması aşamasında yoğurt kültüründen önce genel karışıma oranla kütlece %2 oranında ilave edilerek üretilmiş Karabaş Otu Özütlü Yoğurt Üretim Yöntemi ile ilgilidir. ; Gıda sanayinde yoğurt çeşitliliğini artırmak ve tüketicilere sağlık bakımından yararlı farklı aromalı ve lezzetli bir ürün tüketme imkanı sunmak için geliştirilmiştir. Karabaş Otu Özütlü Yoğurt Üretim Yöntemi için önerilen bileşimler (% Kütlece ); süt (%96), Yoğurt Kültürü(% 2), ve karabaş otu özütü(%2) şeklindedir.
