Abstract
Изобретение относится к структурированному пищевому продукту с твердой консистенцией, содержащему 20-100 % жировой фазы, при этом жировая фаза включает 10-55 вес. % по крайней мере одного жидкого масла с содержанием насыщенной жирной кислоты по отношению к массе жидкого масла менее 25 вес. % и 45-90 вес. % твердого жирового компонента с величиной соотношения Stost/POP по крайней мере 2, более приемлемо по крайней мере 2,5, наиболее приемлемо по крайней мере 3,0, где St - стеариновая кислота, Р - пальмитиновая кислота и ОБ - олеиновая кислота, а также содержит менее 57 вес. % насыщенных жирных кислот по отношению к общей массе жировой фазы. Изобретение также относится к способу получения такого структурированного пищевого продукта.
