Abstract

"PROCESSO DE FABRICAçãO DE SOBREMESA DE LATICìNIO CONGELADA". A invenção descreve a fabricação de uma sobremesa congelada, aparentada com sorvete de frutas, mas tendo as propriedades organolépticas de sorvete de soro de leite resfriado. O soro de leite pode conter uma proporção desejada de gordura, variando de pouca a nenhuma, dependendo da qualidade e do valor calórico do produto final desejado. Agentes adoçantes e aglutinantes adequados são adicionados ao soro de leite, que é submetido a um processo de agitação, aeração e congelamento simultâneos, resultando em uma sobremesa congelada com uma expansão.
