Abstract
"GORDURA DE TRIGLICERìDEOS, SEU PROCESSO DE PREPARAçãO, COMPOSIçãO ALIMENTìCIA E ESPALHANTE DE EMULSãO CONTìNUA DE GORDURA". Gordura de triglicerídeo que compreende triglicerídeos de HUU e pelo menos 18% em peso de triglicerídeos de HOH e HLH, enquanto a razão HOH: HLH estiver na faixa de 30/70 a 85/15, gordura esta que é caracterizada pelo fato de que a gordura contém pelo menos 20% em peso de HUU e de 8 a 30% em peso de triglicerídeos de SOO, em que O indica o resíduo de ácido oléico, S de ácido esteárico, L de ácido linoléico, U de ácido oléico ou ácido linoléico e H indica o resíduo de um ácido graxo saturado com mais de quinze átomos de carbono, com a ressalva de que pelo menos 50% em peso dos ácidos graxos saturados em HOH, HLH e HUU são ácido esteárico. A gordura é preferencialmente obtida através da combinação de duas gorduras naturais com alto teor esteárico.
