Abstract

COMPOSIÇÃO DE GORDURA OU ÓLEO COMPREENDENDO UM COMPONENTE DE ÁCIDO GRAXO INSATURADO POLIVALENTE E UM AGENTE EMULSIFICANTE E COMPOSIÇÃO DE EMULSÃO DE ÓLEO EM ÁGUA PARA USO NA INDÚSTRIA ALIMENTÍCIA. Uma composição de gordura ou óleo compreendendo um componente de ácido graxo insaturado polivalente e um agente emulsificante tendo um HLB de 4 ou menos, em que a quantidade do agente emulsificante tendo um HLB de 4 ou menos é de 25 a 300 partes em peso, com base em 100 partes em peso do componente de ácido graxo insaturado polivalente. A composição de gordura ou óleo pode ser usada como uma composição de emulsão de óleo em gotículas de água. A composição de gordura ou óleo e a composição de emulsão de óleo em gotículas de água podem ser usadas para gêneros alimentícios e similares.
