Abstract

"PROCESSO PARA A PREPARAçãO DE UM PRODUTO DE CASEìNA HIDROLISADA, PRODUTOS DE CASEìNA HIDROLISADA E PRODUTOS ALIMENTìCIOS". Processo para a preparação de um produto de caseína hidrolisada que compreende tripeptídeos VPP, IPP e/ou LPP, no qual um substrato que compreende caseína ou fragmentos de caseína é submetido a um tratamento com enzimas no qual a enzima é derivada de Aspergillus, no qual a concentração de enzimas é de 2-10 % em peso baseada na caseína e a enzima possui uma atividade proteolítica elevada.
