Abstract

PROCESSO PARA A PRODUçãO DE CONCENTRADO DE POLIFENOL DE CACAU, por trata-se de um processo, no qual o concentrado de polifenol de cacau é obtido, que compreende as seguintes etapas: a) submeter os grãos de cacau não-fermentados a uma etapa de descoloração em água, a uma temperatura que varia entre 85°C e 100°C, durante um período que varia entre 3 e 15 minutos, para a obtenção de grãos de cacau não-fermentados com atividade reduzida da enzima polifenol oxidase; b) secar os grãos de cacau não-fermentados com atividade reduzida da enzima polifenol oxidase a uma temperatura inferior a 85°C, para obter grãos de cacau não-fermentados secos, com um teor de umidade não superior a 15% em peso; c) submeter os grãos de cacau não-fermentados secos a uma etapa de redução do tamanho de partícula, para obter o intermediário do grão de cacau não-fermentado seco, por meio da qual pelo menos 99% em peso do intermediário apresentam um tamanho de partícula inferior ou igual a 300 um; d) extrair os polifenóis do intermediário do grão de cacau não-fermentado seco para a obtenção de um extrato de polifenol de cacau e sólidos extraídos; e) concentrar o extrato de polifenol de cacau para render um concentrado de polifenol de cacau, sendo que a concentração de polifenol presente é de pelo menos 10% em peso; e sendo que o processo também compreende uma etapa de desengorduramento, que é realizada antes da etapa d).
