Abstract

PROCESSO PARA A PRODUçãO DE UMA COMPOSIçãO CONTENDO 5'-RIBONUCLEOTìDEOS E SUAS COMPOSIçõES A presente invenção descreve um processo para produzir uma composição que comtém 5'-ribonucleotídeos,na qual um microorganismo é submetido á autólise sob condições nas quais uma parte substancial do RNA permanece em uma forma degradavel nos 5'-ribonucleotídeos e nas quais uma parte substancial do RNA permanece associada com a fração da parede celular. á dita fração de parede celular é recuperada por meio de um método de separação sólida/líquida e o RNA associado com dita fração de parede é convertido em 5'-ribonucleotídeos. A presente invenção descreve, ainda, composições dotadas de 5' ribonucleotídeos e seu uso no alimento ou em comestíveis.
