Abstract
USO DE éSTERES DE POLIOL DE áCIDOS GRAXOS EM CONFECçãO CONGELADA AERADA COM ATRIBUTOS NUTRICIONAIS MELHORADOS. Uma confecção congelada preservando sua suavidade e exibindo crescimento de cristal de gelo reduzido após ter sido exposta ao tratamento de choque térmico e com atributos nutricionais melhorados é produzida compreendendo gordura, adoçante, extrato seco desengordurado de leite e água, em que um emulsificante é usado compreendendo monoéster de propileno glicol de ácido graxo.
