Abstract
Un procedimiento para la producción de una bebida de café envasada, que comprende: (1) preparar un extracto frío de café enfriando rápidamente un extracto de café a una temperatura menor que 20º C; (2) añadir a dicho extracto frío por lo menos un antioxidante seleccionado del grupo que consta de ácido eritórbico, ácido ascórbico y sales solubles en agua de los mismos, y diluir el extracto hasta un nivel que sea apropiado para beber; (3) envasar dicho extracto diluido frío que contiene dicho por lo menos un antioxidante dentro de un bote sin calentar; y (4) reemplazar el aire contenido dentro de dicho bote por un gas mixto que comprende por lo menos dos miembros seleccionados del grupo que consta de vapor de agua, dióxido de carbono gaseoso y nitrógeno gaseoso.
