Abstract
Una emulsión alimenticia baja en grasa que comprende una fase acuosa continua y una fase dispersada que comprende partículas de grasa, partículas de gel y moléculas de aroma solubles en grasa, en la que al menos el 50 % de las partículas de grasa están localizadas dentro de las partículas del gel, y en la que al menos el 35 % de las partículas de aroma están localizadas en una pluralidad de las partículas del gel, con el fin de retardar, de esta forma, la velocidad de liberación de las moléculas de aroma de la emulsión, y en la que al menos parte de las partículas del gel se rompen gradualmente en la boca durante su consumo, de manera tal que después de 10 segundos después de su consumo la mayoría de las partículas están aún intactas, y 60 segundos después de su consumo al menos la mayoría de las partículas ya no están intactas.
