Claims (11)
1. Procédé pour la production de produits alcooliques fermentés avec une faible teneur en diacétyle par fermentation d'un substrat contenant un hydrate de carbone avec un micro-organisme, caractérisé en ce qu'on traite le substrat fermentant ou fermenté avec une enzyme provoquant une conversion d'acétolactate pendant ou à la suite de la fermentation.
2. Procédé selon la revendication 1, caractérisé en ce que l'enzyme provoquant une conversion d'acétolactate est une acétolactate décarboxylase.
3. Procédé selon la revendication 2, caractérisé en ce qu'on utilise une acétolactate décarboxylase obtenue à partir de micro-organismes Aérobacter aérogènes.
4. Procédé selon la revendication 1, caractérisé en ce que l'enzyme provoquant la conversion d'acétolactate est une isomérase.
5. Procédé selon la revendication 1, caractérisé en ce que l'enzyme provoquant une conversion d'acétolactate et une réducto-isomérase.
6. Procédé selon l'une des revendications 1 à 5, dans lequel le substrat est soumis à une fermentation essentielle et un processus de maturation caractérisé en ce qu'on effectue le traitement de l'enzyme provoquant la conversion d'acétolactate pendant le processus de maturation.
7. Procédé selon la revendication 6, caractérisé en ce que le substrat est du moût.
8. Procédé selon la revendication 6 pour la production de vin, caractérisé en ce que le processus de maturation comprend une fermentation malo-lactique pendant laquelle le traitement avec l'enzyme provoquant la conversion d'acétolactate a lieu.
9. Procédé selon l'une des revendications 1 à 8, caractérisé en ce que l'enzyme provoquant la conversion d'acétolactate est maintenue immobile.
10. Procédé selon la revendication 9, caractérisé en ce que l'enzyme est utilisée de façon co- immobilisée avec de la levure.
11. Procédé selon la revendication 1, caractérisé en ce qu'on utilise de l'acétolactate décarboxylase en forme chimiquement modifié pour obtenir une stabilité élevée et/ou une activité optimum à un pH compris entre 4 et 5.
