Abstract
Description
Claims (20)
- 1.調理されたゲル状澱粉配合物からなる澱粉ゼリーキャンデーであって,前記 配合物が(a)甘味料と, (b)アミロース含有量が35重量%以下で約40〜80重量%の低粘度,低ア ミロース澱粉からなる約1〜約25重量%の澱粉混合物であって,前記低粘度低 アミロース澱粉が,半沸騰澱粉および酸化澱粉,さらに約50重量%以上のアミ ロース含有量を有する約60〜約20重量%の酸転換,高アミロース澱粉からな るグループから選択され,前記酸転換,高アミロース澱粉は,澱粉微粒子のスラ リーが約1以下のpHの鉱物酸により約20ml〜約70mlの乾燥アルカリ性 流動物に転換されるプロセスにより調整されてなる澱粉配合物と, (c)水とを含有してなる澱粉ゼリーキャンデー。
- 2.前記半沸騰澱粉は約60mlから約90mlのアルカリ性流動度を有する請 求項1記載の澱粉ゼリーキャンデー。
- 3.前記改質澱粉はトウモロコシ澱粉であり,前記酸転換高アミロース澱粉はト ウモロコシ澱粉である請求項1記載の澱粉ゼリーキャンデー。
- 4.前記酸転換高アミロース澱粉は約50重量%と約65重量%の間のアミロー ス含有量を有する請求項1記載の澱粉ゼリーキャンデー。
- 5.前記配合物は, 約2重量%から約75重量%の前記甘味料と,約20重量%から約75重量%の 水と,約0重量%から約10重量%の調味料,着色成分とからなる請求項1記載 の澱粉ゼリーキャンデー。
- 6.前記甘味料は,DE値が約30と約30と約90の間のトウモロコシシロッ プと,単糖類,二糖類,三糖類,高強度甘味料,さらにそれらの混合物からなる グループから選択された糖成分とからなる請求項5記載の澱粉ゼリーキャンデー 。
- 7.前記調味,着色成分は,天然調味料,人工調味料,着色料,脂肪,油脂,油 性物,界面活性剤,吸湿性物質,ビタミン,または防腐剤からなるグループから 選択された1つ以上の要素からなる請求項5記載の澱粉ゼリーキャンデー。
- 8.前記甘味料は約20重量%から約90重量%のトウモロコシシロップと約8 0重量%から約10重量%の糖成分からなる請求項6記載の澱粉ゼリーキャンデ ー。
- 9.前記糖成分はしょ糖である請求項7記載の澱粉ゼリーキャンデー。
- 10.前記天然調味料は,フルーツピューレ,フルーツピューレ濃縮物,および 脱水フルーツ固形物からなるグループから選択されたフルーツ調味料である請求 項7記載の澱粉ゼリーキャンデー。
- 11.高アミロース澱粉から澱粉ゼリーキャンデー増粘剤を生成する方法であっ て,(a)水と澱粉のスラリーであって,前記澱粉が約50重量%以上のアミロ ース含有量を有するスラリーを形成するステップと,(b)前記スラリーを約4 0℃から約60℃の温度に加熱するステップと,(c)鉱物酸を加えてpHを約 1以下に下げるステップと,(d)前記スラリーの温度を約40℃から約60℃ に維持して約20mlから約70mlの乾燥アルカリ性流動度を有する酸転換澱 粉を生成するステップとで構成された方法。
- 12.澱粉は約50重量%から約65重量%のアミロース含有量を有する請求項 11記載の方法。
- 13.スラリーは約55℃に加熱され,約55℃に維持される請求項11記載の 方法。
- 14.酸転換澱粉の乾燥アルカリ性流動度は約40mlから約50mlである請 求項11記載の方法。
- 15.前記温度は約2時間から約16時間の間約40℃から約60℃に維持され る請求項11記載の方法。
- 16.前記温度は約55℃で約8時間維持される請求項11記載の方法。
- 17.前記鉱物酸は塩化水素酸であり.添加料は,約55mlsの0.1N水酸 化ナトリウムにより,約25mlの澱粉スラリーが中性化(pH8.3)される ように与えられる請求項11記載の方法。
- 18.酸転換澱粉の乾燥アルカリ性流動度は約45mlである請求項11記載の 方法。
- 19.請求項11のプロセスにより生成される澱粉ゼリーキャンデー増粘剤。
- 20.請求項16のプロセスにより生成される澱粉ゼリーキャンデー増粘剤。
