Claims (7)
- 삭제
- 5'-리보뉴클레오티드류와 분기쇄 아미노산을 가지는 짠맛 같은 정미 증강제로서, 5'-리보뉴클레오티드류 100중량부에 대해서, 분기쇄 아미노산이 0.45~81중량부 배합되어 있는 것을 특징으로 하는 짠맛 같은 정미 증강제.
- 음식품에 포함되는 식염 100중량부에 대해서, 5'-리보뉴클레오티드류를 5~50중량부, 또한, 분기쇄 아미노산을 0.05~9중량부 배합하는 것을 특징으로 하는 음식품의 짠맛 같은 정미 증강 방법.
- 제 3항에 있어서, 상기 5'-리보뉴클레오티드류 및 상기 분기쇄 아미노산의 원료로서, 효모 엑기스, 핵산계 조미료, 및, 아미노산계 조미료로 이루어지는 군으로부터 선택되는 1 이상을 이용하는 것을 특징으로 하는, 음식품의 짠맛 같은 정미 증강 방법.
- 제 2항에 기재된 짠맛 같은 정미 증강제를 이용하는 것을 특징으로 하는 음식품의 짠맛 같은 정미 증강 방법.
- 제 4항 또는 제 5항에 기재된 음식품의 짠맛 같은 정미 증강 방법을 이용하여 제조된 음식품.
- 제 2항에 기재된 짠맛 같은 정미 증강제를 이용한 음식품.
