Abstract

A process of producing dagway (Saurauia subglabra) vinegar comprising the steps of: a. Preparing the ingredients by gathering, cleaning and washing the matured dagway fruits thoroughly; b. Mixing 8 kilos of the fruit to 8 liters of water in a suitable cooking container, preferably stainless steel and enamel wares except aluminum wares; c. Boiling the mixture into 30 minutes; d. Straining the mixture separating the pulp from the decoction, setting aside the decoction; e. Extracting juice from about 4 meters fresh sugar cane and setting aside; f. Mixing 2 cups of sugar cane extract to every 4 liters of decoction in step e; g. Boiling the solution for another 30 minutes; h. Cooling the solution; i. Pouring said solution in a suitable storage container tightly covered with clean cloth; j. Aging the solution for one month; and k. Packaging of the solution in sterilized bottles.
