Abstract

Przedmiotem zgłoszenia jest sposób krojenia i pakowania w folie cienkie i/lub podatne na recykling serów, w tym długodojrzewających, w dedykowanych atmosferach, mający zastosowanie w ciągu technologicznym mleczarni. Sposób krojenia i pakowania w folie cienkie i/lub podatne na recykling serów, w tym długodojrzewających powyżej 12 miesięcy, w dedykowanych atmosferach, mających format kręgu lub eurobloku, obejmujących cięcie wstęgi sera, plasterkowanie lub cięcie w klinki lub półklinki, oraz konfekcjonowanie porcji w dedykowanej atmosferze, w którym etap pakowania do opakowań jednostkowych odbywa się w atmosferze ochronnej, którą stanowi mieszanina dwutlenku węgla i azotu, charakteryzuje się tym, że z okrągłego bloku sera lub euro-bloku wykraja się za pomocą ramki do cięcia o zmiennej szerokości wstęgę, którą następnie kroi się na plasterki o grubości od 1,4 do 1,8 mm lub za pomocą noża wykraja się klinki lub półklinki o masie od 100 g do 350 g, jednocześnie dokonuje się prześwietlenia struktury sera za pomocą skanera rentgenowskiego lub skanuje powierzchnię przy pomocy skanera optycznego, następnie umieszcza się ser w zdefiniowanych warunkach atmosferycznych w opakowaniach foliowych o kształcie koperty, lub pakuje próżniowo w specjalnym systemie „soft vacum” następnie waży się opakowania, etykietuje się je, sprawdza prawidłowość zapakowania, dokonuje się detekcji zanieczyszczeń metalicznych i wycieku gazu oraz umieszcza się w sposób automatyczny w opakowaniach kartonowych.
