A invenção refere-se a um processo para hidrogenação de açucares ou misturas de açucares do grupo que consiste em isomaltulose, leucrose, trehalulose, maltulose e lactulose, para álcoois de açúcares ou misturas de álcoois de açúcar, sendo que os açucares ou misturas de açucares são hidrogenados em solução aquosa, sob temperatura aumentada e pressão aumentada, com hidrogênio, sob uso de um catalalisador contendo níquel, ligado a um portador.
